  3. Return it and get a couple Miyabi. Higher end Miyabi may not be a great value but is good product. Sucks because Kramer's early collabs were genuinely well made craft knives, many still hold higher resale today. This was just a money grab.

  9. Those are cheap stamped Henckels, you can tell bc the logo is a single person and not 2 people side by side. That said, it's at least a Victorinox equivalent in quality and steel, and better balanced (and better looking). Street price is about double a Victorinox.

  13. I didn't check the sharpener model you posted. If this is the case, you're taking a 20' Victorinox and reprofiling it to a 15' Asian angle. That would explain how many passes it took you, you had to do some serious grinding of metal. But that should only be needed the very first time you sharpen - for maintenance sharpening after that the angle is already matched, so you should only need a few passes on 2 and a polish pass on 3.

  16. The Victorinox aren't soft, and shouldn't be needing that much grinding. So I don't know what condition your knifes are getting to (how frequently do you sharpen, what material cutting boards do you use, do you ever cut on countertop or on plates), but step1 is really unnecessary on most knives for maintenance sharpening. Usually just one or two on step2 and a polish pass on step3 will get any knife back. One other possibility, how old or how long have you had your sharpener? It's possible but unlikely that the grinding wheels are simply worn out, esp if you've been overgrinding for quite some time on a lot of knives.
  17. I don't know what shape your knives are in or what metal they are, but 15 passes on 1 is absolutely not normal and you are seriously shortening the lifespan of the knife by grinding off excessive material. All your pass counts are way too high.
