  4. Not sure if it’s grades related. I’ll try to find out. Duncanville has a few kids that played at a really high level but weren’t known names going into the season like JQJ, Chris Thompson and Savion Byrd. They have a RB named Trysten Smith and a LB/safety hybrid named Paul Pickens who are both underrated as well. I’d never heard of Rakestraw before the season but he ended up being one of my favorite guys on that defense.
  5. I saw Ennis Rakestraw shut down Rakim Jarrett when St. John’s played Duncanville. He did the same thing last week against Jaxon Smith Njigba. I've been hoping he’d get on Herman’s radar.

  10. My favorite way to reheat tamales is on a comal or cast iron skillet where the edges of exposed masa get a little bit crispy. If you leave them on there until the husks get browned or even a little burned, the taste of the roasted husk infuses with the masa. It’s a subtle but nice touch you don’t get if you steam (or microwave) them to reheat.

  12. My family is from the Valley so I grew up with my mom, grandma and my aunts making tamales before the holidays. When they did it, it was an all day affair and they made enough for each of them to take home dozens. It was a lot of work. About 20 years ago my parents moved back down to the Valley just right down the road from a Delia’s. I don’t think my mom has made tamales since then. I’ve had them shipped a couple times, but I usually pick some up when I go down to visit her. They keep well in the freezer for a couple months if you don’t eat them right away. I like serving them with holiday meals right next to the turkey.

  14. We worked out a deal for $200 plus he kept the other half of the original blackface grill cloth and the Larry Rodgers reproduction cloth I’d purchased previously to use on other projects. A baffle and grill cloth runs about $100 and a tolex recover costs about $200, together about the same price as the new cabinets he builds.
