My favorite way to do steaks these days is sous vide and then sear. My searing weapon of choice is an old cast iron skillet which I get screaming hot with no oil (it all just burns) and I use a cast iron press to make sure I have good even contact. Works pretty well for putting a crust on a medium rare steak.
However, Iād like to be able to baste with butter / garlic / herbs during the sear. How do I do that without burning the butter to the color of motor oil?
Down 65 lbs in about a year. Twice now (once in December and once at a July 4th party this past weekend) Iāve eaten and drank too much and paid for it with a couple days of what felt like a stomach bug. All the more reason to cut that crap out.
My doc says my bloodwork looks great, which hasnāt been true for many years. People say they donāt recognize me.
One notable consequence is that oral medications can take quite a bit longer to take effect. Not a big deal for daily or weekly meds (Iām still on a statin, for instance, but no longer on BP meds or omeprazole for reflux/heartburn) but itās a bummer for ārecreationalsā. Canāt really do gummies any more, and when I took shrooms before a Dead show in March they didnāt kick in until 3am.
Rewatched 28 Days Later over the weekend and it doesnāt hold up super well. The lo-fi video is tough to watch on a 4K screen. I think what made it novel was the āfast zombiesā which we had never seen before. The cast and acting is pretty good.
Gonna rewatch 28 Weeks as well.
