  1. My 16-pound brisket turned out dry as fuck w a mushy point. Maybe my 5th brisket ever - all on LG BGE over last two years. 21-hour cook. After initial 4 hours or so, spritzed every 1.5 to 2 hours w apple cider vinigar/water mix before wrap at 12-hour mark. 4:30pm Thurs: Meat on 240 degree pit (Rub: Costco coarse pepper to kosher salt - 4:1 by volume) 8pm Thurs: Hit 165 stall - very little bark 4am Fri: 8- hour 165 doldrum stall still in effect. Grill temp 283. Finally a solid bark - double-wrapped butcher paper, placed back on grill 6:35am Fri: Wrapped meat 170, Pit 230 8am Fri: Wrapped meat 175, Pit 270 1pm Fri: Wrapped meat 193, Pit 240 1:30pm Fri: Wrapped meat 200-204 handheld probe temps. Pulled off pit 1:45 - 3pm Fri: Counter top rest in original double-wrap butcher paper 3pm: Removed one layer of original double-wrap butcher paper, wrapped what remained in foil and let rest in cooler for two hours 5pm Fri: The Great Unveiling!!1!!! 5:03pm Fri: My shit is dry as fuck Thinking next time I'm cranking to 275 and I'm going to babysit the fuck out of that temp come hell or high water. No more 240 shit. Any advice, observations, and/or mockery welcome.
  2. That seems like a killer deal. I think last summer prime were around $3.79/lb in my area. I'm going in w a buddy so at least I'm not taking the full hit. 8 lbs is plenty of brisket for my little crew.

  6. Honey Boy Very good movie. It's on Amazon Prime. I'm a bit of a Shia fan, so I really thought it was nteresting. He did a good job on this one, portraying his own father. But the young co-star killed it. Not for everyone, probably, but I thought it was a good damn film (artsy, stylish, self-indulgent, sure) Portrait of a Lady on Fire. Please don't let your woman talk you into this one.   7. Going for Shanahan and Niners due to UT connection. However, some new blood -- KC Championship -- would be pretty cool, as well. Chiefs will forever be the team of Christian Okoye to me. That dude was fun to watch. Thank fucking GOD the Pats aren't in this thing.
  8. Just over half way on Mindhunter: Season One. So kickass. I put off watching it for some reason. Very cool show. Excellent editing. Big fan of the music too
  9. I'm on my back porch in Cedar Park/Leander polishing off the rest of the eggnog. Enjoyed the brief thunder and lightning show. Temp seems mild. Maybe a light breeze. I'm glad this "storm" was a giant pussy. (in my area). I can relax now and finish doing absolutely nothing for the evening.
  10. Saw it tonight at Alamo - Lakeline. Absolutely fucking loved it. Came home to do some internet browsing only to discover a world of online hate. Holy hell. I think my expectations were suitably low enough that I was surprized by how damn entertained I was for the two hours or whatever. I drank beer. I ate loaded fries. I had a good damn time. Got a little misty-eyed when Luke's X-Wing rose from the ocean (and maybe a couple other times!). I thought it was a solid wrap-up. Of course, when I see the very real and legitimate criticisms, I can't help but internally agree. But, you know, fuck it -- I enjoyed the hell out of that movie.
  11. I'd say I enjoyed it. Is it worth your time? Yeah, maybe for married people, I guess. Some of the stuff resonated with me. Agree about the pretentious LA vs. NY arts angle. And, yes, while I am not a huge fan of Dern, I generally like her early work (Mask, Wild at Heart). Her acting in this one was over the goddamn top and not believable. "I'd just like to pick your brain" while strutting around the conference table. Give me a break. Excellent work by Driver. The court-appointed observer scenes were top notch -- patricularly the dinner and knife sequences. I also appreciated the concept -- the demoralizing and grueling nature of a divorce. Never had one, never want one so it's interesting to see a portrayal from the safe confines of whatever it is that I have. Divorce sounds horrifying.
  12. Truly infuriating. But I give the team responsible for the documentary an A. Nice editing. Definitely worth the watch. The opening song/sequence is haunting.

  17. A complete film. Outstanding acting. Excellent pace. Dark. Disturbing. I liked that music was so heavily stressed in the trailers and lead-up but was limited in the movie. The style was in the set, camera shots. The wife hated it. No pics. She was not a fan of the realism. The uncomfortable elements.

  19. You gave me too much credit. I figured out what I was doing wrong...using only tiny openings of top cap while ignoring the feature that allows one to slide the cap from side to side for max ventillation. Didn't figure this out until I fortuitously threw some dogs and sausage on the grill. I lowered the dome down after checking the links and noticed that the cap can slide. Learning moment. On a side note, my dad -- who I texted several times during the ordeal -- was shocked by my idiocy. Again. Thanks!
  20. I'm smoking a spatchcock chicken indirect today on a large BGE I bought used from a family friend. I'm having a hell of a time getting the temp stable. Trying to hit 350-375 for an hour or so. Have both external and internal probes set up (Smoke). Bottom vent wide open. Top cap wide open. Can only reach about 320 or so before ambient temp stalls. When I take cap off temp soars fairly easily, but can't hit my temp goal. Cooking with fresh lump and some oak chips I threw in there. Started off with a completely cleaned out set up. Zero ash/debris when I lit the fire. Any advice on stabalizing at 350-375 with this set up? Not sure where I'm goimg wrong. Funny thing is, it's nice and dry outside with a good breeze hitting that bottom vent. I'm guessing there's an airflow problem between bottom vent and top cap.
  21. What shitty luck. Been waiting so long for Colt to take over. Now this. Then a complete fuck of a game (minus a couple decent plays) to close out the evening. So goddamn demoralizing.
