  1. This batch will go into the dressing and the gravy. The stock from the T-day bird, well, you know where that's going.

Since last year, I've started cooking the Anthony Bourdain "Stunt Turkey" a couple of weekends before Thanksgiving to use to harvest the bones for stock, and the pan drippings and vegetables I toss under the rack for the gravy. That wasn't his reasoning, but the cooking process is really simple. And despite its being just the typical oven-bird, it always turns out delicious and is super easy for those who don't want to go to much trouble in the cooking process. Roasting pan. Rack. Bird. Brush 2 T melted butter over the outside of a 10 lb turkey. Salt and Pepper to taste. 2 cups of water in the pan. Roast at 425F for about 2 hours until it temps done. Baste regularly. Once carved up, I freeze the bones, drippings, and veggies until stock and gravy day next weekend. The veggies get milled into the gravy along with the drippings. I vacuum-seal and freeze the meat, which we give to a family we help out from time to time.
  3. I mostly unplugged from 24/7 cable news early in 2021. Even though Trump was out of office, the news still was mostly focused on him. It's simply the purpose of 24/7 news: to keep you watching and sell advertising. They could keep you pretty well informed in the span of thirty minutes, but that defies the purpose. They've got to keep you hooked in for hours. So how do they do that? They either make angry or make you afraid. I decided that being angry and afraid all the time wasn't doing me any good. So I turned it off and found other ways to stay informed, including Surly. Watching that crap just isn't healthy.

  5. I mentioned this above, but anyone who has kids at UT, and who are wanting to meet people who are fun, active, and very social: UT Water Ski. Can't ski? They'll teach you. It's been amazing for my son (who could ski and likes to hang out with people on the weekend in a fashion that seems like a good memory to dad), He lasted one week in a fraternity before he (thankfully, IMO) dropped at the one-week mark. I told him if he wanted to drop out and join the ski team, I'd buy him a ski (way cheaper). It's been the best decision of his academic and social existence to day. So, whether you can Water Ski, it might be for you.

  7. My older son is LHA in History and is law school driven. His roommate just transferred from McCombs to COLA because he hated it, but he still wants to get an MBA My niece, meanwhile got an Engineering and Plan II degree set from UT, worked two years, and has a Consulting firm putting her through her MBA at Wharton with the promise of three more years. I know times are different, but I have plenty of friends who either work in business-degree fields or got an MBA after a L/A degree. So who knows. I just want 'em edumacated.

  9. Don't get me started on how amazing K&Z's is. But those sandwiches always end up being a knife-and-fork situation with a two meals leftovers affair. It's not a bad thing, but it's a different thing. My K&Z's experience was superior to my Katz's (NYC) experience was. But for Meg Ryan.

Maybe I'm wrong, but this feels like a bit. If it is, it's brilliant. This is precisely the first thing I would do if I were in charge of the Onion after it bought infowars. If not, WTF.   21. I already mentioned the Shining when I was about 7 and Airplane shortly thereafter. Truth be told, I saw a ton of age inappropriate movies throughout my childhood and even wrote a parody of Life's Little Instruction book if all of the life lessons were learned from movies I watched as a kid on TV /CSB Anyway, when it came to my older son, I let him watch a lot of age inappropriate movies including Jaws at age 8. He liked it. Around that time, we watched Ghostbusters. My wife watched it with us. We didn't think much of it. But at about 2 a.m. that same night, he work up screaming. I ran into his room and he looked like he'd seen something horrific. I asked him what was wrong and, through sobs, he said, "That lady turned into a dog." Oops. Sorry.
