They were big russets and dropped in a pot of molten pine resin which encapsulated them.  Pulled from the cauldron they would harden with a coating of hard pine resin which was like glass.  They cracked with a hammer and cleaned the top of the shards and dust.  The inside was the best baked potato ever but you had to be careful to not get any pieces in there. Like glass.  I bet they had a few folks sever a tongue or rip out a gum.  It was early on in the Decatur store.

I can't imagine why a commercial restaurant wouldn't have that on the menu.
