  1. Is it a conspiracy theory that the Chinese were researching how the virus acts in bats and they had shitty safety procedures? How is that a conspiracy? Seems more like negligence to me. DDD has a good point though: why do we care where it originated?
  2. Nothing fancy, but a simple tenderloin roast turned out fantastic. Roasted potatoes and sautéed green beans.

  4. Did a little chicken milanese the other night with a WWLB sauce. I’m turned out fantastic.
  5. Review of kitchenaid attachment? Did it work pretty well? I'm looking for a meat grinder for beef tallow, but don't want another standalone appliance. I got the plastic one and it worked fine with the meat. However, I got a strip of sinew with fat that bogged it down (the sinew wrapped around the blade and I had to take it apart to get it out). For ~$40 it's probably worth what you pay and I imagine I'm going to break it before too long. I bought a chuck roast I'm going to try and see how that goes. I'll make sure to update once I break it.
  6. I added some bacon, but apparently not enough. Good idea on getting some fat from the meat counter. I'll have to save some next time I trim a brisket.
  7. I bought the cheap add on to the kitchenaid to get my feet wet. I made some ground beef with some tenderloin trimmings. Way too lean. What’s the beat way to incorporate fat, or am I just using the wrong cut of meat?

  9. It's $27/bottle but I really enjoy the Abadia Retuerta Ribera Del Duero. Otherwise look for some Southern Rhone Giogondas or Vacqueyras. Lots of good value in those.
  10. Since we're entering the apocalypse I figure it is a good time to start making my own ground meat and sausage. Any recommendations for meat grinders (either as a KitchenAid mixer attachment or free-standing) and sausage recipes/techniques?

  15. Oh yeah, for sure. The guy who put it up for the charity auction was not happy it went for so little.
  16. Well done. I had the 2016 over Christmas with my wife’s aunt and uncle. He told us how he bought a jeroboam at the charity auction of a golf tourney in FL for $300. They couldn’t bring it home on the plane so two of them had to kill it that night.

  18. Agreed on Caymus. Apparently the special selection is still made the old way, but the regular is a vanilla fruit bomb. Regardless, there is a lot better QPR out there than anything Wagner.
  19. If you're not looking to spend a lot the Beringer Quantum is pretty nice as is the Stags' Leap Cab (apostrophe after the "s").
  20. 2000 It’s on the neck, but hard to see. Napa had a tough year in 2000 but this is drinking nicely.
