I will add that my wife accidentally bought the honey flavored jiffy cornbread mix, and after some initial disappointment it turned out really well, adding some sweetness to all the savory in that dish. To me it’s more like enchilada pie, so the smoked chicken/green chili edition i bet will be just as awesome. also good move adding extra seasoning to meat and cornbread… I pretty much take any recipe as a baseline and add this and that or extra seasoning as I see fit, as I imagine most recipes are made for someone from Kansas that likes their food bland and black pepper is “too spicy”.
  5. My background kinda killed ribeyes for me I think. Grew up in a nice restaurant and ribeyes were rarely on the menu; strip and filet always but ribeyes would just be a special for the weekend or something occasionally. I can’t begin to remember all the times in high school/college waiting tables and a customer that was a little out of place saying, “what, y’all ain’t got no ribeye???” Maybe it’s just my contempt for those idiots that would substitute bordelaise sauce for A1 and I should see a therapist for it, but I associate ribeyes more with dudes that don’t know what they’re doing on a grill and figure they can’t fuck it up cus there’s so much fat it’ll be tender anyway. All that to say, I’ve had great ribeyes, but not gonna cook them at my house and not paying for it at a restaurant. The only situation i can think of is if I were going to cut it up before serving…. And I’d still probably rather have a strip for that anyway
  6. I too am team NY Strip. I’d go so far as to say that while I will eat a ribeye if presented to me, a) i never buy them to cook at home, and b) they would be my third choice of meat in a restaurant behind strip and filet.

  8. God bless America. Made some smoked chicken drums tonight with bbq and Buffalo sauces. This was maybe the best chicken I’ve ever cooked, certainly as far as wings/legs go. I read a recipe earlier that mentioned pulling off all the skin since I wasn’t interested in getting skin crisp, and that was such a good move, I assume like when Franklin says to remove skin from turkey breast. 275 for about 2 hours and it was perfect.

  10. How many lb? Depending on size you’re probably fine… the last one I cooked got up to 165 seemingly “too fast” but ended up finishing at 203 right around the time I’d originally planned. Briskets be funny like that.
  11. Every year for Valentine’s Day I make my wife’s favorite comfort food meal: spaghetti and meatballs. Usually do the entire thing including pasta from scratch, but I have a 4 month old so fresh buitoni spaghetti will have to cut it.

  15. I’ve haven’t gotten into reverse searing yet, but it’s just too hard to for me not to want to either grill over charcoal, or cast iron sear and finish in the oven for ease/taste/quickness. This baby got the cast iron and it was perfect.
