  2. Carvana gave us anywhere from 4-6K over what we were offered elsewhere for my wife’s 2012 Honda Crosstour we just got rid of. They were even higher than KBB. In Houston, if that matters.

  4. I turned on the TV and saw Ivan was up with two on and promptly changed the channel. Whenever I was watching yesterday bad things happened and when I turned it off we came back to win. Got texts immediately after from my buddies telling me it worked, so I guess everyone is welcome.
  5. I smoked a brisket to vacuum seal and give to my in-laws to take to the beach next week, but they aren’t gonna need the whole thing. I want to take half the point and some of the flat over to a friend’s house this afternoon - other than not pre-slicing, what’s the best mode of transportation, and then reheating? It’s already gone through the rest period so it’s ready for slicing whenever.
  6. I guess in my mind the image above was not what you were referring to. My gripe comes from when places just put a pile of chips down and then spray and pray with the cheese/toppings… which i said pretty clearly. Sorry if I hurt your feelings.
  7. I want maximum cheese/topping - chip ratio. I hate paying for a pile of chips with cheese and meat dribbled over the top few leaving a layer of bare chips underneath, and if I’m making at home it only takes a little more effort to do it the right way.

  9. Yep…big time this^^^ google sleep sacks. We used Halo but there are less expensive options - I’d find one you can get a three pack in because they will spit up and/or have a blowout inevitably. If y’all don’t already have them, I’d also get sleep gowns and pajamas with the double zipper so you can just zip up from their leg. Those will make the middle of the night diaper changes way smoother.

  12. In my experience the only Louisiana team with shitty fans is LSU. My La Tech friends are happy to be in Austin, my UL in-laws still talk about how great a time they had at the Austin regional they played in like 12 years ago, AND they all hate LSU because unlike most LSU fans, people that are fans of those schools actually went there.

  16. Quick sidebar related to the “resting down to 175” part… when I take mine off I wrap them in a towel and go straight to the cooler. Does lowering the temp first make that big a difference?

  20. This turned out really well. I turned the trimmings into tallow and squirted some one the butcher paper and before wrapping - hadn’t done that before. I feel like it made a difference; this brisket was really really moist.
  21. Yep. I took it off after 9.5 hours. I had a bbq guru fan for my Kamado grill, so I went to sleep around 1 and temps were at like 135… woke up at 6 and temps were at 175 so I wrapped. At 205 2.5 hours later. Felt perfect though so we will see
  22. Do y’all ever experience a brisket taking way less time than you’d anticipate? Usually I’ve had the opposite, but I put this trimmed 10.5# on at 11 last night, smoking around 250-260 and it’s at 201-202 all over, just not quite probing fully like butter in certain parts of the flat. It seems like it needs to be taken off soon, I’m just really thrown off by how quickly it cooked.
  23. I got about a 12 #er for this weekend, and a 9.5#, both prime, I’m going to freeze and smoke in a few weeks and vacuum seal to take to Pensacola for the family. The totals were around $34 and $28 respectively… the way prices have been lately I felt like I was stealing them.
  24. On their website that’s what it was listed as too, but when I went in the store they had it marked at 2.97.
