  1. I enjoy the dicing. It's the peeling of onions and carrots and garlic and trimming the ends and cleaning the shreds of skin and washing of the board that slowly triggers my curmudgeonliness. There's an appeal to just tossing shit together just to do the actual cooking. Hence the growth of the meal kit business.

  5. I really miss living next to a major airport hub. From my current residence, anywhere we need to fly are all best served by a hodgepodge of nickel- and diming- discount carriers. For leisure, for work, short haul, medium haul, doesnt matter. No full-service legacy/flagship carriers unless flying long-haul, and thats with a minimum of 1 stop for basically anywhere.

  10. The slightly lower weight actually does feel more comfortable for longer use, whereas the pro feels more premium and substantial. Was looking forward to the Apple Intelligence features but so far its quite garbage. Have not used anything where I can appreciate the 16’s higher horsepower, but the lower refresh thing is a constant reminder of the impression that it is slower (ie appears laggy). I’ll just keep it around for a bit because it’s a free upgrade due to corp. cycle. Then I’ll give away one or the other to family.

  12. On the ooni i do 3 things to get the bottom heat in balance with the top (at lowest setting): preheat longer; flip/rotate the stone during preheat; and cook the pie at the front of the oven away from the rear flames. It also helps to do neapolitan pies that have much thinner crust
  13. I was never satisfied with doing schnitzel / cotoletta / fried cutlets at home until i cracked the code: the meat has to be **thin** Presliced pork or veal typically comes in at 1cm thick. You have to butterfly that sumbitch in half. Then it becomes super easy to tenderize. Then after breading (in whole-wheat breadcrumbs) and frying it comes out 99% restaurant style, like a true Wirtshaus.

  16. I regret not doing a sleep study when i literally lived next to a sleep study lab and was single and had nights to burn. BMI low 20s so the only remedy might be to fucking zap my tonsils with a laser or something.
  17. Yeah, i sleep with the girlfriend. Wife sleeps with the dog. But forreal, we transitioned to separate blankets. I have a thinner one, she has a thicker one, and we never have to jostle for it. We also use separate adjustable slats under the mattress so the bedfeel is slightly different on each side. I snore tons. She got used to it. Once in a blue moon if one of us is deeply ill we might sleep separate.

  20. Even if signals portend an AI bubble, I think its an indictment of the EU/RoW that they were never even involved in the first place (besides Mistral?). Neither were they comparably significant in streaming, social media, robotics, cloud computing, fintech, or any other major trends. They get credit for perhaps clean energy, robotics, and fat pills. Not enough, IMO.

  22. Scott Galloway and Kara Swisher agreeing on something is a pretty good warning sign to do the opposite. I agree with the sentiment that US markets are stretched. I don't agree that internationals are the answer. The US outperformance hasnt been just a flash phenomenon -- its been true for any period of time this century you reference from, before/during/after any major economic events, Dotcom, GFC, Covid, etc. There is a good reason the US indices have outperformed Europe: nothing of their regulatory environment or tax regime or consumer capacity or even appetite suggest fertile grounds for economic growth. Can someone name offhand 5 European success stories? Spotify... Adyen... and... LVMH? maybe some Pharmaceuticals? The US has 10x SAPs for every 1x of Germany's. Earnings growth for all the Europe indices is half of that in the US (~5% vs 10%). If you correct that for that in their ntm P/E, the ratios all fall back into line.

  24. Saw an Audi ETron GT at a lot. I actually dont like the looks of its, but this one had brakes that caught my eye. Gigantic saucers of a thing, but especially in a mirror-perfect finish. So apparently, a few companies offer them aftermarket, but Porsche also do them as 'Surface Coated Brakes' using tungsten carbide. Can't be too compromised if Porsche puts them on the Cayenne. And the ETron has regenerative braking so friction brakes arent leaned on too much. Catchy stuff.
  25. I've run through so many shitty 3rd party wired and wireless charging shit* I'd advise to spend the premium and buy stuff endorsed by Apple through their store. It's the least bad heuristic**. Never used that specific wireless charger, but recently bought a Mophie multi-port wired charger and it's the least shitty version of that device of the 5+ that I have. *even "good" brands like Anker is shit. **it's not infallable. recently had a bunch of fresh OEM Apple lighting cables fail too.
