One of my favorite meals as a kid was a homemade roast beef salad sandwich made by my Grandma. On Saturday, she would cook a pot roast for family dinner and any leftovers were put through a hand grinder and mixed with mayo, pickle relish and onion. I need to find the time to make this next weekend.

My mother did the same with leftover meat.  She had a grinder for her mixer and would make the pot roast beef salad, or pork roast salad, and if there was a leftover steak or two she’d grind them up for a ground steak salad which was the tits.  Dad was an excellent grill man on the Weber and generous.  If they had folks over he’d cook a couple extra steaks in case others came.  Thank you for reminding me of this dish; I got to make it too now.

My grandmother had a sloppy joe recipe that used canned gumbo and mustard as a base. And we’re about as high plains, white Lutheran as you can get. I have no idea where she picked up that recipe but man it was good.
She also cooked knip for breakfast. A lot. Crispy on the edges and covered in syrup.

I would definitely try that!

And now I also want to figure out how to make Knip.

My Mom made some form of midcentury casserole that was Ranch Style Beans, spaghetti, and ground beef, maybe with some cheese on top.

Don't know much beyond that but it was pretty tasty.

Take it to the awful Cincinnati foodways thread... :)

My mom made her kids and grandchildren a cookbook of all of our favorites growing up.  Another tasty treat was "Hamburger Chili Rice.  Basically, a pound of ground beef (browned), onion, green bell pepper, can of chopped tomatoes (she didn't do spice, but this is where I would sub Ro-Tel), 2 cups of rice, 3--4 cups of water, lots of seasoned salt, chili powder, cumin, boil, cover, cook until done.  I know this thread has taken a turn into damned tasty stuff our parents threw together, but like other easy recipes mentioned above, this one also is pretty solid, weeknight fare.

I'm digging what your mom is laying down.

Trying this tonight.

Somewhat recent (at least in the last 20 years) is sweet tea. I want iced tea. I don't want to have to order unsweet iced tea, i want to just say I want an iced tea and get an unsweet iced tea. If you want sweet tea, you're either 10 years old or from Georgia.

As a Native Texan, it makes me rage that I have to specify Unsweet Tea.
