Sometimes there's a man... I won't say a hero, 'cause, what's a hero? But sometimes, there's a man. And I'm talkin' about this French chef who put 254 kinds of cheese in one pizza here. Sometimes, there's a man, well, he's the man for his time and place. He fits right in there. And that's the chef, in France ...

If you can find a good Italian products store- taleggio.  It will stink up your kitchen when you open it, but the taste is pretty mild. 

I am a huge stinky cheese fan, but a couple months ago I tried this stuff and it just nearly knocked me out. The locals love it on almost everything and even made an ice cream out of it— more like a gimmick than anything else.  Melted and on a grilled crusty dark bread with tomatoes, it wasn’t half bad.
