  1. We are simply blessed with great barbecue in Texas.
  2. For its beef ribs, InterStellar uses chuck short ribs as opposed to plate short ribs. The plate short ribs are the Dino ribs that come as a three large bone rack. Chuck short ribs are slightly smaller and usually come it a four bone rack. When slicing, InterStellar removes one of the four ribs which allows them to serve three equally sized ribs. It's nice since they are not one and a half pounds each. They are still big enough to split with others with a tray of other meats. @dcbc should probably order two, though.
  3. Last few times I've been the parking lot is full and you can see a line inside the glass doors. Get inside and its a bunch of hipsters getting coffee at 11:30 in the morning. No line, no waiting for barbecue.

    BHI passed straight to the opposing goalkeeper several times. Uzuni only touched the ball 16 times (I can't remember even close to that many). All the play was up the right with Gally, Owen, & Buka. Very little through the middle or on the left. They have to figure out how not to be so one dimensional in the attack. G,O, & B put together some great chances, but if that is all you have it become fairly easy to defend against. Uzuni plays too far to the middle to be considered the left wing which leaves Biro trying too hard - they don't have the chemistry as G,O, & B. Really looking forward to Dani being back and Robert Taylor working on the left. I hope that will help with a more widely spread attack.
  6. Agreed. It was in my Top 5 coming out of our barbecue tour in 2017. I stopped there in November and had a great meal. Other really good barbecue joints that fell out of the Top 50 and are now in the Honorable Mention: Hurtado, Terry Blacks, Zavala's, Micklethwait, Blood Bros, Feges, Roegels, Stanley's. There is only room for roughly 50 joints in the Top 50 and there are clearly many more great barbecue joints in Texas. For that I am grateful. I'm not aware of any joints outside of Texas that would make the Honorable Mention, let alone Top 50.

    I think this is the definition of playing to your opponent - draw against crappy ATL and RSL; draw against top tier MIN and VAN.

  9. I have read through the TM Top 10 and through the Houston joints in Best of the Rest. The offerings and the pictures of trays from the Top 10 are simply incredible. I wish I could justify the time and money associated with hitting the Top 50 this year like I did in 2017.
  10. Quick count shows 17-18 spots outside of the your triangle which is roughly 35%. Seems like a fairly good representation. Others within your triangle, but are not otherwise associated with the big cities - 2 in Montgomery, Brenham, Lockhart, Lexington, Harker Heights, Belton, Taylor. Looks like a reasonable balance between the large cities, small towns, and rural locations. About half of the Honorable mentions come from small towns and rural locations.

  12. Loose predictions were pretty close. I don't know anything about West Texas barbecue outside of Evie Mae's. On second look, one of my contenders made the list for new West Texas joints and the other two made the Honorable Mentions.

  16. Big fan of William Beckman and he was on my potential list of five. We've seen him a couple times and his voice is incredible. This song isn't country, but highlights his voice and range.

    They played pretty well against a good team. Would have been great to get a win, though.
  20. Made that stop in December of 2006 on the way to Ruidoso for my little girls to see snow for the first time. After dinner at Chuy's we drove 10 miles out north of town so the girls could see what a starlit sky really looks like.
