  1. They look great, I just wasn't sure about reverse flow having never cooked on one. The baffles seem to do a great job at evening out the heat in the cook chamber on these traditional offsets. Are there other advantages to reverse flow?
  2. Yes, it is similar in some respects to the specs of a Franklin pit, but better in other respects. With the options I got, it came in at a little under $2,600. The main difference is cook chamber size 48x24" on mine vs. 42x20" on Franklin (minus the baffle/pan shelf I think its 39" in length at the grates) and the Franklin has an air-gap insulated firebox (24x20) which is probably overkill in Texas for that size of pit. For the most part, I feel like I'm getting upgrades over the Franklin pit for half the price. Examples: the pipes on mine are 3/8" thick (1/4" end caps), whereas Franklin is 1/4" rolled steel. Smoke stack dampener and scoop baffle versus none and a water pan shelf/baffle from Franklin (Phil will make you a pan shelf like Franklin's but it interfere's with the scoop baffle). 6" casters (I think Franklin's are 4", but his pit weighs 250 lbs less than mine). Probe port versus a notch (notch may be better in the long run; it was on my WSM). There are two notches on the firebox door to use as reference points for the air intake versus fixed air intake on Franklin with opening the door as an option. Other options galore that I didn't bother with, I.e., golf cart chassis for rolling it across the yard, trailer pit, top shelf, 60" or 72" cook chamber, folding stack, insulated firebox, etc. But for the quality, it's an absolute steal, and in the burn in, it was easy to use and seemed to hold temps without too much fuss. I did not bother with a port for my DigiQ. I'm keeping the WSM for those occasions when I want to cook meat and do other things or sleep. This is going to be all analog and, if I ever change my mind on that, I can drill I hole in the firebox door. But I'm almost positive it's an option (even if it's not listed). The price difference of these and comparable pits like the Workhorse 1975 is based on the fact that these are made of repurposed steel pipe and appears to be a two-person operation. I gave it a sniff, and it does not appear to have been sewer pipe. Build time is 10--12 weeks and mine was ready right on schedule. He's been in business for over a decade at least. So I wasn't worried about the 50% deposit. Before I came across this, I was looking at the Old Country G2 at Academy. It's a lot of pit for $1,900. 1/4" steel with an insulated firebox t'boot. But for a bit more, spec'd out just like I wanted it and custom built for me, I feel like this was well worth it. https://bluesmokesmokers.com/

  4. Until then, here's a gut shot of it. The baffle sits below the grill grate about 4" from the firebox pass through. But you can move it around or remove it.
  5. I'm firing it up tonight for a short, inaugural cook (ribs and sausage) weather permitting. I'll get some shots of the inside and the baffle.

    This is 100% true. There's a list of "never anothers," and it's sad. But we got to co-exist with a lot of them. Could be a thread.

    Absolutely brilliant. I had a lot of Jewish friends growing up, and the first time I saw this was with one of them at his insistence. I was so hooked, Goy though I am.

I'll save it for the forthcoming thread, but with the older one, it entailed a total willingness to try to understand what it's like to be a teenager in 202x, the knowledge that we cannot begin to understand what that is like, and, for a very uneasy period of time, psychiatrists, therapy, and medication. A lot of it was about finding his interest, with which a friend group follows, and the growing up process. Knowing that other friends were dealing with almost identical situations with their kids helped with parental despair. It was helpful to hear from one good friend, who said, "Do you want to feel better? Same story with all three of my kids." His kids are doing great now too. We had to resist trying to force things. As my mom once said about me, "At a certain point, I stopped trying to raise you right and just decided to raise you." My younger son is a different story (so far). Plays tennis, which has a built in friend group. But he has other friends that he has grown up with. Super chill. Works hard, etc. Just different people, both of whom are amazing humans. /edit to add: Diversity never was an issue. They went to magnet schools in elementary and middle schools, both of which were "out of our district." They both always had diverse friend groups.
  14. Mine went to/are in the public school system here, and while there are plenty of exceptions, their friend groups have tended to be quite progressive. That tracks fairly closely to my friends who live in other parts of the country with GenZ kids. But yes, it is depressingly red here in east Texas. But voter turnout has been record-breaking this cycle, which, hopefully, means the margin is shrinking.
  15. As the father of two young men, sign me up for this discussion. Both currently are healthy and well-adjusted, but it has been a lot to navigate.
  16. Correct. Thanks for catching that omission on my part. Also, if you do this, you are, thereafter, registered in the county in which you cast your limited ballot.

If you have a kid going to school in Texas away from the county in which they were registered (or if you recently moved out of the county in which you were registered) and that person still has not registered in the new county of residence, that person can vote a "limited ballot" (federal and statewide elections) at the main polling place in the new county of residence. In Austin, that means the Airport BLVD polling place. This little tidbit just saved my son an 8 hour round trip drive home to vote. Hopefully, it will help someone else.

  20. There are several at every law school---smart enough to get the grades and foot in the door but not enough baked-in common sense and hustle to be of any use to anyone else.
