    @1978horn That looks delicious! Did the oven roux last night. It went well with a few caveats. It took way more than 2 hours at 350. Even after 3, though dark, it wasn't as dark as I usually like it. Of course, I can get there tomorrow on the cooktop, I guess. It was nice to not have to stand and stir it for an hour-and-a-half. But if I'd been in a hurry, I'd have been better off just making it on the cooktop and storing it. Got my veggies and sausage diced/cut up. Homemade turkey stock is defrosting. I should be able to just heat things up and go tomorrow.

  4. The problem with the All-Clad mill was a consistently weak spring across products, including mine. So it wouldn't push things through well. The OXO was the Food Lab recommendation. But as a gift, the giver sought an upgrade, which ultimately wasn't an upgrade, despite its being a hefty piece of kit.

  7. Got some good kit in October. I got a fat separator, which was great for turkey drippings. I also got a Food Mill. First one was All-Clad, but it was surprisingly shitty, albeit a substantial piece of equipment. Sold it on ebay and got the OXO I wanted in the first place.

  11. I probably posted this before, but if you want a good quack/pop type envelope filter for not a lot of $, you could do a lot worse than an 80s Boss T-Wah. Looks like you can get them for just a little over $100 still. And, its being a Boss pedal, it will last forever.

    Gumbo

    We're heading to Austin on Friday. So I'll be making gumbo on Thursday after lunch (probably to store for when we get home). I'm trying to streamline the process and will be doing an oven-roux ahead of time (Wednesday), which I will store in a jar in the fridge. That and doing all the veggies/sausage chopping/slicing ahead of time should cut down on the time considerably.

  18. Carbon steel is the way. It's only 5 years old and got stripped and reseasoned about 6 months ago. Definitely a forever pan. I've got 3 of them.
  19. Grilled cheese on Mamaw Batch 1 for the younger kid. Apparently was delicious.
  20. Had some down time and did a spite bread test batch. Taste is spot on. Crust is a bit firm. Otherwise, it's there. Only difference is 100% milk this time
  21. Holy shit! What a soap opera. I don't have the patience to break this up into separate quotes to which I offer my witty rejoinder. So . . . The Surly lawyer contingent all involuntarily salivated when You quoted the teenage girl, "You always do this," etc. Your offer to help pull the car, which you assume is his responsibility, out of the ditch makes you a solid neighbor in my book. That sort of ask-no-questions type of response is rare in 2023 and super appropriate to the situation. The rest of the story with the side-piece is total WTF. I feel like Bill Murray in Stripes. "That story about you and the cow and how your friend wanted to make it with the cow? I want to party with you."
