  6. Yeah, I don’t think every detail of the family and the characters’ backgrounds is necessary to the story. If some of that comes out in Season 3, great. If not, fine with me. And it’s hard not to see why Richie’s wife left him, even if we don’t know the exact story. He was a hot head stuck as a utility player in a sandwich joint. His wife seemed to want some upward mobility, and in Fishes she had talked about finding a more-expensive house in a better neighborhood when they were up in the mom’s bedroom, and at the dinner table she was clearly excited at the idea that he might get a halfway decent job from Uncle Jimmy. And they never explain how that panned out, but a fair guess is that Jimmy gave Richie a shot at some sort of a job (Jimmy is clearly dirty, yet he also can be a softie when it comes to family) and he somehow fucked it up.

  13. Looks great. But 1.5 hours seems awfully long to me for a roux. I cook mine at medium heat, but constantly watch it and don’t let it sit without stirring for more than 30-45 seconds. I can get a dark brown roux in about 30 minutes (or two beers). And good job with the Worcestershire and soy sauce. As I’ve mentioned in this thread, I picked that up a long time ago from my Cajun friend and have never made a gumbo or fricassee without them since.
