  1. We're home for one day today after camping in Fredericksburg on my BIL's property for Christmas, but before going back out camping with a big group of friends in Georgetown for the next week. So I'm making a big batch of Texas Red whilst watching the Cowboys game, with intent to consume on New Year's Day, watching the Horns beat the hell out of ASU, when it should be nice and chilly all day. Thinking back over some discussion a few pages back about the steeping water being bitter, which has never been my experience, and I realized that something I always do but don't really think about-- I always stem and de-seed the dried chile peppers before they go into the oven for toasting, and thus before the chiles go into the steeping water. Another point is, I don't ever boil the dried chile peppers, just use hot water. I think either of those things, either steeping with the seeds and veins and stems in, or boiling the peppers, can result in bitter water. But as it is, if anything my steeping water always turns out a little sweet, most likely from the anchos in the blend. Anyway, just something I thought about as I was doing it and thought I'd post it up here in case it might help someone, when doing the rehydrated chile method.
  2. Relax. TX-OU will never go to Jerry World. If it ever leaves the Cotton Bowl, it'll go home-and-home. But the current contract with the Cotton Bowl is through 2036 so the immediate future is secure.

  5. Stiles Switch does BBQ chicken pretty well. At least the one in CP, I don't think I've ever had it at N. Lamar. It's funny though, it's getting tougher and tougher to find smoked yardbird on BBQ menus. 2-3 decades ago it was quite common, anyone who did brisket and sausage and pork spare ribs probably also did chicken. Now it's common to see turkey and pork loin, and less common to see chicken.

  7. Similar thing happened for the game against the ags. Mediots picking A&M just because it was a home game for them and there's no way Texas was going to withstand 110,000 screaming ags in maroon. At night. Texas physically dominated and won then, and I expect Texas to dominate physically and win today. But to win comfortably, the Horns are going to have to avoid unloading the shotgun directly into the foot over and over and over again.
  8. Ha! Yeah my wife won't go near aged nog, either. Every time I have some, she keeps expecting a hospital trip, even though for many years now I've proven that it's just fine.
  9. Fairly true, but at the same time, I don't mind when the drivers let their real emotions show. I get so tired of cleaned and whitewashed sports where fierce competitors are expected to act like they all love each other.

  18. They have the same goal and the same pressure as every other team in the CFP. I don't expect them to play any better or worse because of it. Texas will win this game because Texas is the better team. Texas has the capability to blow them out by 3 scores, but we haven't seen that Texas team since midseason, so I'm expecting a closer game than it should be, similar to how the A&M game was closer than it should have been.

  20. You know something? You're a real buzzkill this morning. I recommend you go outside, go for a walk, fly a kite, maybe find yourself a laughing baby or a rainbow to smile at. Come back later with a better attitude. Next thing, you're gonna tell me there's no way Texas can beat Clemson because Klubnik has a score to settle in Austin, or something. Sheesh.
  21. I disagree. It would be super-expensive for sure and almost no constructors could afford it, but cars would be custom-tailored to drivers in a way that hasn't been done in the sport for 4 or 5 decades. I think we'd discover driver preferences and advantages that are currently masked by the standardization of the technical regs.
  22. I don't really care about the tires themselves. I think there should be zero regulation on them. No forced pit stops for tire change, but a team can pick and choose any tire compound they want and run it the entire race, or change tires every 2 laps if they want. Also, bring back refueling, with zero sporting regulations about when and how it should be done. Several steps further would be to eliminate all technical regs completely and let teams develop engines and cars however they like. Safety regs would of course still apply, but if you want to build a 6-wheeled car with an 11-ft-high rear wing, go for it. Now get off my lawn.
  23. Amen brutha. CDC and our athletic department are always going to choose the "more money" option and playing marquee OOC opponents brings in more money.
  24. Yeah I don't find that surprising. Cedar Park is generally a lot smoother running, and also the quality and consistency of the food is better. I've pretty much given up on the Lamar location but CP is consistently good.
