Funny this came up, because I was just there last week for work. Definitely Delias. Those tamales are life-changing. I liked Palenque Grill, but I wasn't blown away. Salt on Main St was really, really good. Probably the best meal I had when I was down there.

Ybarra's is 100x better.  We used to get and bring back Delia's then we discovered this place.  I highly recommend you give them a try.   Also in Weslaco.

Will add Milano's (Italian) Arturo's in Weslaco.  Blue Onion was a solid rec too. All right off the highway too.

I was about to say drive to the beach for Dirty Al's but isn't there one in McAllen?

When I was working down there,  the best tacos were from the vendors who would stop by your office at 9:30 with the tacos in a cooler.

Someone should’ve bat signaled me here, damn. All great recs given out. I’d add sunrise cafe in Weslaco and any Wing Barn, for wings. 
 

El Pato kind of sucks in my opinion. 

Margos in Weslaco has the best raspas in the RGV. The strawberry delight, holy fuck

For pizza I actually like Formacio in Mercedes more than mamma mia.

Yeah in Harlingen Vegas & Pepe’s are staples, smoke is decent BBQ, but goddamn that Applebees. I want to cry everytime I go back and see it, reminds me of childhood.

University drafthouse is solid. Peter Piper unironically has really fucking good pizza down there. El Patio is great for an early dinner, think they close like at 8 or something. Besides that you might have to make the long 5 minute drive to McAllen for more food options.

Teddy's bbq is in Weslaco, which isn't far. They were high on the TM list.

What kind of place are you looking for? University Drafthouse is a great option for a beer and burger place. Howling Rabbits has good beer and pizza. If you want something more upscale, check out Salt or Ambra. Three of those are in McAllen, but close to the UTRGV campus.

The cities do border each other at parts, I guess technically it could be a 0 second drive.

Thanks for chiming in on something you have no idea about. It’s legitimately great pizza, the pizza sauce has a good zip to it and it’s reasonably priced. I’ve been to NYC and I’d rank it over some of the highly rated local spots I tried up there.
