The last week of August my girlfriend turns 50.  We were wanting to do an Isla trip or something like that, but want a few more friends to go so I wanted to get some recommendations for a good place to go for 3 or 4 days.  We will be driving from the Woodlands area.

This will most likely be us two for this trip, so looking at resort type hotels, nice restaurants, etc.  

Or some totally off the wall boutique hotel that is a must.

Availibility at such short notice probably sucks.

As you already know, anywhere close is going to suck from a weather (heat) perspective in late August.  However, what about the west end of Galveston (Pointe West)?  Condos down there can be had for $175-200 a night.  Sure, it's Galveston it's not a huge trek, there are decent restaurants in town and the west end is quiet and pretty laid back.

If you're talking about Terlingua, it does.  I stumbled on it when looking for answers to your starting point.  I'm contemplating booking something there.  

If you're talking about Pointe West, it is.  I am not a huge fan of the Texas coast and don't love the beach but Pointe West is a nice area.

Thread title says "Texas"...but Lafayette, LA is an underrated and easy destination.  Good restaurants, lots of worthwhile attractions in the area, boutique hotel downtown.

I would assume you're referring to their Hill Country branch and not their Waco one.

Sonora is probably too damn far from The Woodlands, but this place is remote and pretty great if you’re looking for something relaxing and secluded. The on-site restaurant is pretty good, but really you go here to get away from everything. Plenty of activities to keep you busy if it doesn’t turn into bangapalooza.

Eh, we all know how that goes, despite all the great resort advice Surly gives everybody for free. 

This has probably been suggested multiple times, but we could make said advice contingent upon following the rules.
