Here's a couple from my childhood.

Video Jukebox.  When my parents got us HBO around 1982 or so, that's all the cable we had at the time.  We didn't get the multi-channel package that included MTV until a couple years later.  So HBO's Video Jukebox was my first intro to music videos.

Also, HBO got me hooked on comedy as a kid.  The "On Location" series with Robin Williams, George Carlin, Buddy Hackett, Sam Kinison, and others.  And the Young Comedians Special, introducing us to people like Bob Saget, Bill Hicks, Andrew Dice Clay, and Louie Anderson.

Going to someone’s house with HBO or Cable even was always looked forward to as a kid. (I did go to grannies in town a lot for cable access) We lived in the country and had an antenna until I was 15 when my dad finally got direct TV. We weren't poor, my dad just saw no point in getting one of those huge dishes. Then I finally talked him into Direct TV.

There was a stretch where it seemed like Die Hard was constantly playing, and my friends with HBO would get annoyed when I was over at their house and insisted on watching it. One of my friends that had it, it was hooked up to a TV in den, across the house from the parents bedroom.  When I was staying over for D&D or whatever, I'd ask to watch whatever late-night smut was one.

He would tell me "Somebody could walk in on you watching that" and my response would be:

One time he said "yeah, but what if it was my mom?"

Same situation, but prior to satellite so no option but antenna. I house sat my boss's apartment for a week for free just to watch HBO and order food delivery.
