TM 'Cue Course with Wayne Mueller

A couple of take aways:

1) Never seen anyone take a mallet to a brisket when trimming.

2) The cooked brisket that he sliced looked great.*

3) The Louie Mueller dipping sauce is probably my favorite sauce - I usually make John Mueller's version for beef ribs.

4) That old building is awesome and worth the trip from time to time.

 

*ETA - I don't remember ever being served brisket that looked that good at LM.

The main upside for it was that one night, my wife really wanted bbq at dinner.  There aren't many places that still have decent meat choices available after 8:00.  B&G did, so we went there, and had a decent dinner.  But it was never going to be a regular destination.  And dear lord they spent so much money on that buildout.  I have NO idea why so many restaurants are spending a kabillion dollars on their build, putting themselves deep into debt before they ever serve a plate of food.

I have much more respect for places that occupy a recently vacated restaurant site (like an old Pizza Hut), decorate it with some shit from their garage, and serve killer food.  Family-owned mexican and chinese restaurants do a great job going this route.

Bill Millers getting it done  - Texas Barbecue giant’s $60M headquarters is almost ready

Plans for the new plant were first revealed in October 2020 when the restaurant chain filed a report with the Texas Department of Licensing and Regulation (TDLR). The filing outlined the blueprint to a 335,000 square foot, two-story headquarters slated for 5330 State Highway 151, not far from the San Antonio Food Bank. 

The facility will also include house and servicing equipment and a truck docking space, MySA previously reported. The emergence of the new, multi-level cooking operation, marks a new chapter for the company, signaling an outgrowth of its location at 430 S. Santa Rosa Avenue, its home base since since 1971. In a social media post teasing the new site last summer, Bill Miller Bar-B-Q dropped hints about what folks can expect to see, noting the foundation had been laid, structural beams were in place and fire pits, which will smoke some tasty meats two floors up, were already being built.

Just drove by their new facility. It’s definitely massive.

On Black and Gold, seems like the general Austin consensus has been, "there is a place called Black and Gold that serves BBQ" ?  

I'd never heard of it.

Their Q is significantly better than Miller's which is still getting unjustly fluffed as a top 50 joint, where people go to get breakfast foo foo deserts and coffee. I helped Miller's get on the map back in the day, but their notoriety after the move to the newer building success turned them into a tourist trap. Food is still pretty good, but it's a shame they threw away some of the best in Texas.

Yeah, they use M&M rotisseries which burn real wood.  Burnt Bean has an M&M rotisserie as well, but I'm not sure what they cook on it as they use traditional offsets for the heavily lifting.

Kind of a bummer.  I've had some good meals there.  But it's also been a long time since I've done so.  Have had a coupla shooting the shit sessions with Mr. Mays, always a colorful experience.

IIRC, they were offered millions for that property....might just be time to take that offer.

Anyone been to Burnt Bean since it hit #1?  I'll be in San Antonio and though about swinging by there Sunday.

What's a good time to get there as I see they've got a Sunday morning 8 AM opening, but i'm not really looking for breakfast food.

The menu is so vast, it's difficult to decide.  To cope, we got food for lunch and food for dinner (and probably another lunch and dinner.

Half pound of moist brisket, two pork ribs, and a baked sweet potato . . . and . . . the Casanova - huevos rancheros with brisket and barbacoa.

Another half pound of moist brisket, two poblano and jack cheese sausage links, and two smoked pork chops to go.

Everything we've had so far was delightful.  Really looking forward to the sausage and pork chops. 

@Pablo this is my report from about a year ago.  I have seen a couple other Sunday morning reports, since hitting #1, of people getting there between 5:50 and 6:50 and eating before at 8:15 and 8:50 respectively.  You can order the entire menu on Sunday mornings.

i swung by mid july about 10 am on a sunday and the line was down donegan to camp.

Just have to get there early enough on Sunday to get through the line before the barbacoa runs out. Everything they serve is great, but that might be my favorite. Almost always go on Sundays just for that. Haven’t been since they were named #1 though. Fear we may have reached “have to make a huge order for pick up ahead of time” territory for me to get barbacoa.

Change of pace.   Stopped by El Grandpa Barbacoa this morning.

Arrived around ten til 8:00 and walked up to the trailers and seating area.   Grandpa was already giving his explanation of the business and is history.  There were probably 20 people there when I got there.  Mostly families. 

Next we were invited into the trailer to witness the opening of the pit.

As he was unpacking the pit, he pulled out at hunk of lamb, yanked out the rib bones, and started passing out tacos.

Following the pit unpacking, we went back out and ordered.

I got a sampling of tacos, a pound of lamb barbacoa, and some consome to go.  When I left there were over 100 people eating and ordering.  I was the only gringo.

Got home and ate the cabeza de rez and the pancita/montalayo (lamb belly).  The beef was great.  I didn't like the lamb belly as well.   Both of the salsas were incredible.   I also took a couple bites of the jalapeño lamb sausage taco, which was great as well.

If you like non pretentious tacos cooked in a traditional way, it's worth a try.  They're only open Saturdays and Sundays from 8-11.  I'd suggest getting the early to see the unloading and getting a free taco.

No chance that he's received multiple offers over the last ten years and the number gets bigger as the property increases in value.
