Correct.  This is their soft opening and they're going to go on a two-week break so I suspect we'll see more tweaks as time goes on.  Who knows.  I don't hate supporting a new local restaurant.

A non-traditional plate at mum today.

Beef and Jap Cheddar sausage was solid, but the smoked bologna was outstanding!

That Waco location seems pretty hit and miss to me.  I was pretty disappointed the last time we stopped through there, but this tray looks outstanding!

This tray was great.  I went to the Waco location a few weeks ago and that one was a miss from most times I go there.

Correct.  I've been there twice this year when I was in town and was disappointed both times so now I just drive a few more miles out to Helberg BBQ.  Maybe I was just unlucky.  I found the Terry Blacks brisket was quite chewy.

On the other hand, that Dallas location has been consistently good when I've gone there.

Stopped at Louie's Craft BBQ in Buda today. Food trailer with outdoor dining that scored a spot on the TM Honorable Mention list this year.

Moist brisket, pork ribs, regular and texas cheesesteak sausage (not pictured). Brisket was cooked perfectly, although they could have trimmed the fat cap a little more. Ribs were alright - slightly sweet and a tad over for my taste. Regular sausage was dry and lacked much flavor. Cheesesteak sausage was better.

If I lived in Buda, I'd probably eat there periodically. Just playing through i'd probably choose Bloodworth BBQ in Kyle.

Made a trip to Leroy & Lewis.

I would consider it a very high floor trip. Everything was really good, but nothing was so damn good I had to rave about it.

Partner and I shared cheeks, flat iron, brisket, whole hog, bacon rib, hash, papas, cauliflower burnt ends, and carrots. The "bacon rib" is the best marketing for a slice of pork belly I've ever seen. By the time we sat and ate, the hash and papas were cold, not a big deal, but would like to try them hot. Will def go back for a burger, Italian beef, and other anytime options.

L&L beef cheeks are absolutely the single best bite of BBQ I've ever had.

Like I said, they were really good. I got a "Beef Cheeks" hat. With modern high end bbq, the distance between floor and ceiling is so small that getting that perfect bite surpassing all expectations is damn near impossible.

My three top "rave about Texas BBQ" moments, (nostalgia rearing it's ugly head):

  1. Late 80's first time at Kreuz, original location, after a cold morning of quail hunting.

  2. Some place driving home from the 2005 game in College Station, got 2 sliced brisket sandwiches that still stick out in my mind.

  3. JM Meat Co. beef rib and squash casserole

These three were so far above expectations that it's hard to compare to the modern stuff. I doubt the first 2 could stand up to a L&L beef cheek in a side by side taste test, yet in my mind they were better.

I havent been there in over 8 years or so. But I do remember their brisket and beef cheeks being among the best ive ever had

I'm surprised I haven't seen more people cooking them on here. They're really easy to do (I wouldn't say replicate). But it's a quick trim, four hours on the smoke, and about 6--8 hours in a slow cooker to let them confit in beef tallow.

That's been my experience as well. Bill Dumas didn't stay all that long after John passed and that made a difference as well.
