So…I just saw this magnificent beast online. The Vaquero, from Vic’s in Albuquerque.

CFS. Topped with chili gravy and cheese. Served on top of beans, potatoes, and two over easy eggs…served on top of a piece of fry bread.

You would die, but die happy.

There was a place in Austin that had a Mexican CFS in the early 90s. Maybe I’ll remember where later.

looks good, but not sold on rice / beans for the side

It also comes with tortillas, so in order to make a proper Mexican cfs taco, the beans and rice come in handy.  And yes I did pour more queso (upper left) on top of it.

I enjoy the change up from traditional CFS sides to rice and beans, especially with queso.

I need to try this...

I always get stuck on doing it the "traditional way" that I've done before.

Because it looks delicious.

Go half and half.  Half with queso, half with gravy.  Best of both worlds.

If they didn't, it was only because they were distracted by such a lovely view.

Three granddaughters in Oklahoma so it makes it tolerable.  The cfs at Del rancho is gods.

One member here has great great great grandkids, repeating of course.

If you're referring to armybrat, I believe his great great grandkids fought in the Spanish-American war.

Where to go in Dallas proper?  I used to the Cowboy CFS from Matt's on a regular basis but have been craving a good one lately.

We ate at Moonshine in downtown Austin last night, so I had the CF Steak.  It comes with a chipotle gravy, and the whole thing was pretty damn good.  Also, huge.  I got the fries, they sucked, so here's a stock photo with mashers:

I broke out the deep fryer and cooked some CFS.  After that, I fried some okra.  It was a great meal.

That looks finominole.

Even without gravy, but of course the right gravy would take it up even further.

I figure everyone living in Austin on this board must have had the Moonshine CFS by now, by your post reads like it might have been a first. We stay near there for games in the fall and wind up going to Moonshine 2-3 times a year because of it. I think their CFS is one of the best you can find anywhere.
