  1. A few of you seem to be ok with the Mike McCarthy hiring. You are wrong. Might as well put a 100 pound fat suit on Garrett and ran him out there, because that's what were getting. A coach that doesn't use the tools that he has, makes horrible in game decisions, and doesn't know the rules of the NFL. Mike McCarthy is a fat fucking retard. There's another board that I frequent that is centered around gambling and is also full of pretty smart people. Lots of people on the board gamble for a living. Some on sports, some on poker, some on other things. To differentiate Mike from the other coaches named Mike in the NFL they called him "Fat Mike". There is a thread on the forum that discusses stupid decisions from coaches. The thread title is occasionally changed to whichever coach has done something stupid lately, but Fat Mike has been in the title for most of the last few years. Lets look back at some of the highlights. In 2013 the nfl rule was if you throw the challenge flag on a play that is automatically reviewed such as a turnover or penalty then the play won't be reviewed and it's a 15 yard penalty. Less than two weeks after Jim Schwartz does this Fat Mike throws his challenge flag on a James Jones catch that got called a fumble.   4. Not sure where to put this but on the Cochlear Implant that was asked about above. She will never really be able to fully understand speech over the phone since she has been deaf her entire life but she can now recognize a bunch of words over the phone, on TV and in background conversation. The funny thing is the normal bullshit that we hear every day. Birds (1), fridge running, ice dropping in the fridge (2), water left running (3), water boiling (4) (1) Her calling me at work: When you are in the house, can you hear birds chirping outside Me: Yes Her: Well, they are annoying. We need better insulation (2) Her: Something is wrong with the fridge. It makes this horrible sound like parts are falling out of it Me: They are. It's the ice Her: That's annoying (3) Since the implants, she has yet to leave the water running while washing stuff in the bathroom sink. Our old sinks didn't have overflow holes so she has flooded the house twice because of this. Between the implants and remodeling the bathrooms, thankfully that hasn't happened. (4) The number of ruined water kettles/pots due to being left on while boiling water had decreased dramatically since the implants. Downside: It is no longer safe to say shit behind her back when she pisses me the fuck off. In the past, I just had to be aware of mirror placement, but now she can actually hear shit.

  10. Let's do just a short intellectual exercise here. Imagine that the US was a company, and you were a shareholder in said company. It comes to your attention that the leadership of the company is repeatedly doing slap-dick shit like this -- inadvertently sending out major pieces of correspondence on the direction of the company, inadvertently copying the competition on internal emails, the CEO is regularly making decisions that require board approval without getting such approval, and the board maintains that they are not concerned by that, the CEO is making impulsive decisions that repeatedly ignore the advice of the expert consultants that the company has on staff to analyze specific issues, the CEO refuses to even read the short briefings put together by those consultants, the CEO is booking company events at his private properties, charging the company top-dollar to the tune of hundreds of millions of dollars....and well, we could go on. How in the BLUE FUCK would you not be at the next shareholders meeting trying to vote every fucking one of the current board members out, and demanding that the CEO be terminated immediately thereafter? You'd be the dumbest goddamned shareholder the world has ever seen if you DIDN'T do that....but we have millions of people who think that this is cool, cool. We are Moronistan, the worst of all the stans.

  12. Before we start, I just want to say that I'm a firm believer in the credo that there's no perfectly-right way to make Cajun food. There are plenty of WRONG ways, but the beauty of cajun is it's background ... whatever was available can be put into a gumbo. That's why a seafood gumbo sometimes has more pescatarian ingredients than a local aquarium. It's all good. Get the basics right, and then experiment and make it your own. Donald Link (Cochon, Herbsaint) tells stories of growing up in Acadian parish, where Gumbo was the sunday meal, and it contained whatever the family hadn't finished throughout the week. That's the gumbo I make. There are lots and lots and lots of very qualified coonasses on this site; we can all learn from every one of them. Pescado and Brisket lead the way, btw. My family is cajun several generations back. My aunts still have a working understanding of spoken french, even though they can't write or read a lick - comes from listening to my grandmother, and great-grandmother shout at each other. When I was old enough to care about such things, my family put together a cookbook for me, and the family gumbo recipe was inside. When I need a chuckle, I'll go read it again. There's not a single ingredient that has an explicit portion listed. The recipe calls for "a medium onion" and "some salt" (and so on). One of my aunts loves the fact that she literally had to stand next to my grandmother and watch her make it, so she could write it down for me. Ours is a simple recipe, made even simpler by my current brood that are a little bit spice-averse. You won't find jalapenos in mine, or poblanos, or even white pepper; all of these 100% belong in a gumbo if you want them. We also don't use Okra, and I don't want to get into a holy war here. We're a file family, but it don't make a shit; eat what you like. Needed ingredients, chicken and sausage gumbo: 10 cups chicken stock (see below for some detail on this ... ) Chick from 8 chicken thighs, de-boned and lightly shredded Two links sausage of your choice (if it were just me, this would be a good spicy cajun andouille ... but my family requests a less-spicy option, usually. It don't matter - eat what you like), sliced into rounds Medium onion, slightly smaller than your fist, diced. Medium-sized bell pepper (traditionally it's a green one, but again, use what you like), diced. Four stalks of celery (give or take), chopped Four cloves of garlic (give or take), minced. 1/2 cup flour 1/2 extra virgin olive oil salt and fresh ground black pepper (to taste) A note on the oil; some/many recipes will call for good ole' vegetable oil, but modern medical science looks poorly on the 'expressed' oils. I've made this with both, and 100% cannot tell the difference. If you use oil for your roux (which I do), use good olive oil. If you prefer something like duck fat, bacon grease, etc, that's awesome too. Eat what you like. First, you make a roux. Actually, not quite. I find one of the key controls of flavor in the finished product is the quality of the stock used. And since you need to pre-cook the chicken anyway, let's make the stock ourselves. The ingredients here aren't in the list above. Fill a stock pot with 12-14 cups of water Rough-chop an onion, three raw carrots, a few sticks of celery, and put in the pot Liberally season with salt, pepper. Don't tell anyone, but a good dash of Italian Seasoning here adds some savory that I quite like. Throw in a bay leaf too. Bring to a boil, add chicken thighs Here's the magic ... when the chicken is done, debone it and return the bones to the stock. Reduce heat and simmer stock, bones and veggies until stock reduces by about 25%. You want a nice, oily look. Strain veggies and bones, set stock aside. You're looking for about 10 cups, but if you end up with fewer that's ok because you're just concentrating the flavor even more. Add store-bought stock when making gumbo, if you have to. Onto the main course! Now, you make a roux. Get yourself a good flat-bottomed dutch oven, or some other equally heavy-duty flat-bottomed pot. Add flour and oil to the pot, with your stove on low heat. Use a whisk to combine them. Low heat. Lower. Trust me. Lower. That's better. You'll read "stir constantly" in most recipes you'll find for making a roux. It's necessary in the later stages, but not early on. Give it a few minutes, then stir. The mixture will start to bubble; when it does, stir. As the roux cooks, you'll end up stirring more often, and for the last half of the cook time, you'll be stirring basically constantly. You'll get a feel for it - the first few times you do it, stir a lot. Once you know what to expect, you can back off on the early stages. The key to making a tasty roux is color. You want the roux to be dark brown. If you've ever made hot chocolate by melting dark chocolate in a double-broiler, then you've seen both the consistency and color that your final roux should hit. If you've never done hot chocolate that way, what's wrong with you? Do it now; it's AMAZING. If you still need a color reference, cook until the roux looks like the color of the outside of an old mahogany grandfather clock. "Paper grocery bag" is way too light. "Old copper penny" is getting closer, and would make a fine gumbo if you so chose, but you can go darker. If the roux starts to flake off the bottom of the pan and the dark pieces don't re-integrate with the rest of the roux, or if your house starts to smell like burned ass, you burned the roux. Welcome to the club, everyone does it. Throw it out (CAREFUL - that shit is hot), and start over. No harm, no foul. When the roux is done, immediately add all the veggies. This has the effect of stopping the roux cooking process. It'll throw off a great saute smell. Aside from the eating, this is my favorite part of the process. Saute veggies in the roux for 6-8 minutes, until the celery is soft but not mushy. Note - prior to this step, make sure your chicken stock is warm. If you've made the stock directly before making the gumbo, then it's probably still warm. If it's not warm for whatever reason, warm it up. Low heat in another pot while you make the roux works well. Add 2-3 cups of warm stock to the roux, and stir to incorporate. The roux may separate slightly due to temperature mismatches, but should recombine in short order. Add remaining stock. Add chicken and sausage. Salt and pepper to taste. Remember that the sausage will add salt, so don't overdo it. Your guests can always add more Pepper is strong, esp if you have time to let the gumbo simmer for a while. Don't go crazy. Add another bay leaf. Simmer for ... a while. An hour at least. Two is better. Three is even better. Make white rice. Buy gumbo file and crystal hot sauce. Put a serving of rice in a bowl, cover liberally with gumbo, making sure to get plenty of chicken and sausage in there. Top lightly with file, and hot sauce to taste. Cold beer and a spoon, and you're off to the races.   13. I mentioned this in the "I'm cooking for a lot of people" thread, but figured it may justify it's own home. We hosted a pachanga at our house this weekend for my 40th. Ended up with about 90 people. Probably 60-30 between adults and kids. I did four briskets. We grilled a dozen chickens. We also roasted two cabritos. They were the star of the show. I'm a gringo, but I had help from an Argentine buddy. It turned out damn good. Will do it again for sure. Here's what we did: First, I got a goat. Two actually. Picked them up Friday from Johnny G's off Manchaca. These guys were a little over 17 lb each. They were still kinda frozen but fit nicely in a 120 qt cooler. Stacked ice on em for the day. Saturday morning, I hung em up in the garage and let them thaw a bit. We built a little half wall with some stone I had laying around and rounded up some red oak from my back hillside. Got the fire going mid morning. The weather was glorious. The beer was cold. I built two parrillas. I thought my design was great. It actually sucked. I made the legs collapsable with bolts and pins for easier storage. The pins sheared when we tried to level the parrillas with a sledgehammer. Hence the vice clamps. Oops. Also, I already know that I suck at welding, so let the fabrication criticism commence. But, hobby welding's like golf and sex. Even if you're no good at it, it's still pretty damn fun. We started with a bunch of spatchcocked chickens to figure out the heat. My aggy Argentine parrillero buddy. He's awesome. For aggy. One of the nicest guys you'll ever meet. He's also a damn fine cook. His in-laws own a catering business and he's good and efficient and knows what he's doing. Time to prep the cabrito. Salt. Pepper. Some olive oil. On to the parrillas. I learned a lot here. Coals under the hams. Coals under the shoulders. Not much under the ribs. Murphy the dog approves. We were thinking about two hours. Ended up being closer to three. That meant we pulled them off after dark, so I didn't get any good money shots prior to cutting them up. Also, I got pretty drunk and forgot to take more pictures of the finished product. I think my wife took a bunch, but I'm too lazy to go ask. Lots of folks kind of gathered around while we were butchering them and ate pieces as they came off. The mini-tomahawks with rib meat and backstrap / tenderloin was awesome. Kidneys were pretty good too. But, the shoulders and hams were legit. Put some homemade chimichurri sauce on them over a fresh corn tortilla, a bit of diced onion and some cilantro. Cabrito heaven. Brisket did not suck either. We had way too many leftovers and sent everyone home with meat for days. I got the meat sweats. Ate leftovers all day Sunday too. The end.

  14. Today was a big milestone for Shelby as she completed her 6th and final chemo infusion. It’s been almost 3 months since she first got sick and she has done really well since the surgery. The vet oncologist had diagnosed her with stage 3 hemangiosarcoma for which the prognosis was much worse than we originally expected. They didn’t expect her to make it this far and said most dogs don’t so they aren’t sure what to expect moving forward. However, not only is she still alive, they say the cancer is now undetectable in her blood and on her abdominal ultrasound today. Essentially she is kicking ass and our vet support has been incredible to get to this point. They called her their miracle dog and said they plan to write a case report about her for the vet literature. Here she is walking the trail this evening, happy as can be and enjoying life.

  16. You're going to get a happy ending from a robot masseuse, so get used to it. Also, on the automation issue, and even in a larger sense, the transformation of our economy from being labor-intensive to service-intensive, is the question that looms over our future. And I put it in harsh terms, to avoid ambiguity: what are we going to do with our morons? Understand that by definition, 50% of Americans are of below-median intelligence. Not everyone can grow up to be a computer programmer, doctor, engineer, etc. We used to have a HUGE job sector for folks on the lower end of the intelligence band: for the longest time, it was agriculture (while it takes some common sense and a solid work ethic, you didn't need to be a genius to farm). Then, as we became less agrarian, we filled that gap by becoming a manufacturing society. Again, while it takes some common sense, it doesn't take a genius IQ to work most assembly lines. And the point is, all of that is good, honest work. Work that for a long time, could provide for a person/family. When those jobs go away (or more particularly, when the types of those jobs that pay a living wage or better go away), what are we going to do with the folks who used to fill them? What are we going to do with the farm workers, the coal miners, and the wrench-turners on the assembly line now? Sure, there are some jobs that may work in substitute, but not in the numbers needed to occupy that full segment of the work force. All people should have a path that allows for dignity and self-sufficiency. If we don't answer that question correctly -- whether it's AI or something else that's making it a pressing question -- our society is fucked. I'm listening to anyone who has good ideas about it -- right, left, I don't care. Acknowledge the problem and brainstorm solutions, that's what we need.

  17. You can't allow someone to change the standard for how business is conducted. If money is paid, the hand is played. Word gets out that: "if you're good enough, you can fuck over any school you want" or "Georgia can be taken for a ride" and suddenly the school(s) has lost all control of the process. Georgia is as fucked up and corrupt in the recruiting game right now as anyone except, apparently, ATM and probably soon to be Ole Miss (again), but they can't take a semi-public depantsing from a recruit and their faction, no matter how good the recruit may be. In this situation, putting Zack Evans' head on a spike and parading it around for all of the agents and handlers to see serves as a good cautionary tale with corrupt recruitments going forward. I expect a Maurice Clarrett-level career arc for Evans. ATM will find a way to get him in. He'll be celebrated by the ignorant non-recruiting CFB media as a recruiting coup for ol'Jimbo and a sure-fire sign that "the sleeping giant has awoken!!!! root toot!! hullabaloo caneck caneck!!! yackety sax!!". They'll do what they can to feed him the rock in 2020 and if he stays healthy, he'll have a great season for an 11-2 team. Everyone will keep telling him how amazing he is until gloriously fucks something up in the offseason through his arrogance and penchant for doing whatever the fuck he wants, irrespective of consequences. He'll then eventually wind up fringing NFL rosters before winding up on a porch in Galena Park or prison. The whole way through all of that, there will be occasional sympathy stories from your Tom Rinaldi types that pop up every year or two.

  18. The premise that 9 wins is some unattainable, unlikely number is absurd. Beyond that, no, 9 wins doesn't save Herman's job anyway. Texas needs to win the conference and be in the playoff picture next season. Short of that and Herman's probably out. Frankly, I think if Texas isn't 11-2 heading into a bowl/CFP or better, they're more likely to have fallen apart and have a 6--6/7-5 record than some middling 9-3. People clearly haven't taken a good look at everything returning for various teams yet, but Texas is bringing back a lot. We lose 2 OLs, 3 WRs (2 that we care about), Brandon Jones, Roach, and McCullough. We return 16 starters plus both kickers. A ton of defensive players got experience this fall, even if it was in a terribly structured situation with Orlando. If Texas receives even competent coaching, we should win 11 games before the bowl/CFP. LSU loses a comparable amount, plus Burrow and whoever declares early (Delpit, Chaisson, Jefferson, are all possibilities) and I'm interested to see if they retain Brady or not. OU loses its 2 best offensive weapons and its 3 best defensive players. They'll be really good, but this should always be a great game. Baylor loses 11 guys not including early entries or Brewer retiring. KSU basically loses their entire offense. TCU loses a ton on both sides. WVU and KU are pretty far away from being a legitimate threat if UT actually shows up and gives a shit. Tech is meh as usual. Basically, Iowa State and Oklahoma State both return a ton of talent. Couple those two games with OU and LSU and its a 4 game season. If that's not the case and Texas lays an egg or two in the other games, Herman's flatly gone.

But I've seen it in action....and the results speak for themselves. When I was younger, I was pretty hawkish. But I've seen what over-reliance on force as a tool does -- or more aptly, doesn't do. I've learned. I've changed my views. Why in the hell can't our leadership (setting Trump aside -- the man doesn't even read, much less learn)?
