1 extra minute over canned biscuits and far superior results. That being said, I’m down for doing it with a rotisserie chicken instead of a raw whole from scratch.

We have all of the cedar fever over here.  The wife’s (no pics), turned into an upper respiratory infection. Mine (you don’t want pics) turned into pink eye (cedar or the 4 y/o, not sure).  So, cooking instead of golf for me.  Last nights and tonight’s dinner (the radishes inIMG_1520.thumb.jpeg.17ee70d86e28922d28f941a7e6010172.jpegIMG_1525.thumb.jpeg.ecd1bf86da818bcd002094aadf1cab0b.jpeg the beef stew were a last minute bad idea from our garden).

Dammit! It’s cold up here in Tulsa today!  A hunting buddy’s dad introduced us to his ‘Quick Posole’ a couple of decades ago on an extremely cold day out on a ranch in Shackelford County.  Had to whip some up recently to beat the cold back.

If you have the ingredients, you can have this together in less than an hour.  I love traditional New Mexican posole but if you’re short on time, this hits the spot.  Usually serve with skillet cornbread or quesadillas.

Quick Posole

— One pound breakfast sausage browned

— One large onion diced and added to browned sausage, cook for 2-3 minutes

— Four cans of hominy, white, yellow or mix.

— Two cans of Rotel Original

— 3-4 potatoes diced

— Chicken broth (enough to cover ingredients)

— 1 Tbs of Cumin

— Regular Chili powder (McCormicks, etc.) to taste

I am envious of your mise en place.  I just chop and toss in the pot as I go.

Wife made a big pot of pinto beans.  Gonna have some cornbread and pig out.

Didn't get pics, but made a pot of turkey chili with turkey we froze at Thanksgiving for just this reason. Used the Homesick Texan recipe. Starts with toasting and reconstituting ancho, pasilla, and guajillo chiles. So good.

I used to be a really frantic cooker.  Then I started doing mise en place.  It takes a lot of the strain off of cooking.

My wife asked me to make this hamburger stew tonight, so I obliged. This was super easy, pretty quick, and very tasty. Served with cornbread but I could also see not adding potatoes and serving over mashed potatoes to make a lazy shepherds pie or something. Anyway, I’d eat it again, it was damn good. Not my picture but you get the idea
