doing my part.  Went over to Costco early Saturday to get some steaks for an afternoon/evening of CFB and culinary enjoyment on the patio.  Saw the price and NOPED on over to the Pork Butts.  Weber SM and pulled pork sandwiches it is.

Pulled a similar move at the Shoney's on Seawall blvd in Galveston.  We'd been fishing the flounder run at San Luis Pass since sunrise.  Got out of the water, and we were damned hungry.  Drove straight to Shoneys.  Went in still wearing our waders.  Made massive plates of food - including unlimited bacon - while still smelling of seawater and muck.  And shit, it was the Shoneys on Seawall, I bet we IMPROVED the classiness of the joint.

My understanding is that the herds haven't recovered since Covid. As the OP stated, as a nation we'll have to collectively defer consumption to allow the herd to grow in numbers. Soo, that will NEVER happen. Also, we just had a yuge trade win by removing Australia restrictions on US beef to allow our beef to be exported to Australia, a country where they have a HUGE surplus in beef and don't need our beef. I guess next we can try to sell ice to Eskimos.

Buy directly from smaller cattle ranchers.  A half cow, quarter cow, etc.  It's cheaper and supports local ranchers.  

If you can, hunt.  Even a mid-sized doe can provide enough meat for months.  Lot's of landowners I know would welcome help on their place in exchange for a doe.  Mesquite work.  Road work.  Fences.  Feeder management and relocation.  Dead hooker burial is optional.  Just don't ask too many questions.

the cure for high prices is high prices.  It happens EVERY time.  It takes time and there will be economic blood along the way.

multi-year even multi-decade droughts in Texas and the western US from Colorado to New Mexico to Montana and Utah, etc., etc. have not helped.

I just got back from a trip to Spain 2 days ago.  I'm well acquainted with Iberico pork.  Also a big fan of Duroc, which I can find here in CO.

On the freezer route.  Get what you can.  Having is better than not having, but the upright freezer option is so much better than a chest.  The chest freezers have a black hole in the bottom of them where shit just disappears.

Did you get a chance to visit Sobrino de Botín in Madrid, Spain?  I desperately want to eat there one day.  Oldest restaurant in the world.  Roasted suckling pig to be exact.

No shit.  We have 2 chest freezers.  There's stuff at the bottom that has to be 10-12 years old.

Didn't go to Madrid.  We did Barcelona, then a few days in the Matarrana countryside, then went to Valencia.

Why not skip the middleman and advise all Americans to start raising their own cows?

I'd also like to note that boxed beef was sharply lower again this morning with packers puking cuts, with live cattle futures 350 to 400 lower and feeder off 700 to 800

There's cheap and plentiful meat available for my Austin homies:

- Squirrels

- Service animal dogs at HEB (a grab and run type of scenario)

- Grackles

- The homeless

Just gotta start thinking out the box.
