Lol at purist gatekeeping. Look, snows was the last great bastion of the old school joints. But time has moved forward and soon people will move on. It was good in its time. But to think its one of the best cue spots in the world is laughable. The similarities to the craft beer/coffee/insert cuisine here/ revolutions are obvious. Snows is Shiner circa 2009.

That’s not what you did though. And you continue to prove your stupidity by the last paragraph. If you want to argue it’s not top 10 anymore you probably wouldn’t get shit for that opinion but saying it’s worse than door dash is fucking laughable. It’s still a top 15-20 joint in the state because consistency and quality.

No its not. Again, eat more places. Their cue doesnt hold a candle to the stuff that has popped up over the last 4-5 years.
 

And i can DoorDash Truth BBQ, as its less that a mile from my house. Pinkertons is just over a mile. Truth has always been better than Snows

Nope, also not there. I know because there have been times that I’ve wanted some delicious BBQ delivered to me and the only option was Goode Co.

Nope on Favor, have no idea what Hyperflyer is and you can’t order delivery through their website. I really have no idea why a top 10 bbq joint would deal with the hassle of dealing with third party deliveries and it appears they agree with me.

I've never "been" to Snows.  I ordered it online like a civilized human being that doesn't want to stand in a stupid Aggy line.  It was excellent, as expected.  UPS>Door Dash.

I just learned from the list, the original owners of Cattleack sold the place to their pitmaster. I dont think he changed a thing. Which is awesome. One of my favorite spots.

I wonder how many of these bbq joints are in the SA / Houston / DFW triangle.  It seems like most are every year.  Is that a function of the writer(s) not venturing out that much?  Very few listed every year are off the beaten path.

I’m no MBA, but I reckon the best place to open a restaurant is near where people live.

Quick count shows 17-18 spots outside of the your triangle which is roughly 35%.  Seems like a fairly good representation.  Others within your triangle, but are not otherwise associated with the big cities - 2 in Montgomery, Brenham, Lockhart, Lexington, Harker Heights, Belton, Taylor.

Looks like a reasonable balance between the large cities, small towns, and rural locations.  About half of the Honorable mentions come from small towns and rural locations.

I've talked to Daniel about this. They'll go anywhere. They go to the places that make the list multiple times. If somebody comes back with an unexpectedly high or low score, Daniel will go personally to see what's what. I think TM reviewed more than 300 for this list. Take a look at some of the metropolises represented by the top 10 this time: Seguin, Port Neches, San Juan, Aledo, Port Lavaca and Wolfort.

And for those of you still bitching about Snow's, the food is still great. Tootsie's pork steak is worth the drive by itself. Hanging around with other BBQ lovers, drinking free beer/bloody marys on a Saturday morning -- what's so shitty about that? Can't UberEats that. Being there is part of the experience.

I agree with you in regards to the experience, but I’m in the underwhelmed camp by the food and I’ve been four times (it’s a good day trip for when we’re hosting out of towners).  
 

For me, the brisket doesn’t stand out and that’s my main protein.  Pork ribs were also just kind of okay.  I think their chicken is their best meat and it always sells out too fast.  
 

On another note, I did have Mum for the first time this weekend at the Mueller Farmer‘s market and their brisket was on point (their pastrami was also a highlight).

I have read through the TM Top 10 and through the Houston joints in Best of the Rest.  The offerings and the pictures of trays from the Top 10 are simply incredible.  

I wish I could justify the time and money associated with hitting the Top 50 this year like I did in 2017.

And I'd be lying if I didn't say part of my affinity for Snow's is the friendship that I've been blessed to make with Tootsie over the seven or years she's been coming up to Dallas every spring to be a celebrity judge at our BBQ cook-off. She loves the Ashford Rise School of Dallas (which is what all of our events benefit 100%) and she keeps coming back every year -- without fail. The one year she missed was the year Kerry had a stroke and she felt like she had to be at the restaurant on that Saturday. (I almost feel sorry for those that to go Snow's the weekend of our event because I'm sure they're totally bummed that she ain't there. But I digress.)

Each time I make it to Snow's, she comes out to say hello and visit with me and my group (whoever it might be) -- if we don't have an arrangement to jump the line and sit in the back room. One Father's Day weekend I was with my parents and son and we decided to make a run over from Lost Pines where we were spending the weekend. I texted Tootsie and she said, "C'mon." We waited for several hours. She came out and asked if there was anything we wanted. I was quick to tell her I was looking forward to getting a pork steak. She said they were getting low and pulled one aside for us. Of course everybody around us in line were whispering and asking who the fuck I was to get such an audience with the grand dame of Texas BBQ. Once we made it through the line, she sat with my family and I for nearly an hour while we ate and visited.

Another time, a group of buddies and I drove down in a 1980 tour bus that one of them owns and spent the night next to Snow's. We were the first ones there but were the third group in line because we went next door to the pool hall to drink beers that evening. I was able to greet Tootsie when she came in to work at like 4AM. She told me I should really go get some sleep before they started serving food. I was pretty shit-faced still. LOL.

That woman is a Texas treasure.

And I gotta tell you, as something of a BBQ fan (see username), I've been around and experienced Texas BBQ for decades now.  Including back in the era when most readily available barbecue was decidedly mediocre (think little roadside joints good for chopped beef sandwiches, or urban places that were chains like Luther's, local joints like Bert's, or even small town outfits that were decidedly meh).  There were a handful of "classic, great" joints.  The Lockhart places, Louie Mueller's, Cotten's, Luling City Market, etc.  And yes, Snow's (kicking myself for not going back when a client in Lexington told me I needed to come visit one Saturday for barbecue, back when it was still a local secret).  It was a big deal to go to one, like a special road trip from town, or you stopped at one when you happened to be heading that way to go fishing or somesuch.  We loved 'em, and going was a treat.  Read "Legends of Texas Barbecue" to get a feel for what I'm talking about.

Then, the "craft barbecue" movement kicked off.  It largely overlapped with the birth of internet food discussions and reviews.  John Mueller opened his place on Manor Road.  Got lots of buzz and attention.  Then Aaron opened his trailer, and a focus on a real "perfectionist," refined approach to smoking traditional Texas barbecue kicked in.  And this movement has produced some AMAZING food.  I love it.  I can get world-class, make you change religion barbecue at a dozen places in Austin alone now.

But fucking hell and goddammit.  In a quest to out-barbecue-snob each other, everyone is disdainfully looking down on places that are, and remain, glorious cathedrals of deliciousness.  Fuck that shit.  I've had plenty of high-end, "new gourmet" brisket from many of the places on the TX Monthly list.  And I have to tell you, give me a top-end bite of brisket from 20 of those places, side-by-side, and I would be hard-pressed to tell you the difference.  They are ALL amazing.  Sure, any place can have an off day, etc.  But bottom line, we live in a world where you can get 10-out of-10 quality barbecue at dozens of places.  And people are arguing whether it's really a 10, or is it a 9.98?  What the fucking fuck?  We're entering the "that supermodel has pointy knees, would not bang" territory of barbecue discussion.  

It's fucking stupid.  It's barbecue bro snob culture, and it's fucking stupid and annoying.  And it's killing what we love.  You know who DOESN'T engage in that bullshit?  A guy who has literally made Texas barbecue his passion and career, Daniel Vaughn.  He genuinely appreciates the embarrassment of riches we now have.  And he's not denigrating any place by putting it in the 11-50 category.  The bottom line is that, aside from a unique twist here and there (egyptian style seasonings, or brisket fried rice), every one of these places is making barbecue that would have been the best barbecue you've ever tasted 25 years ago.

I'm brisketexan, and I love good barbecue, and I appreciate the fine folks who make good barbecue, which can now be found all over the state.  And I think that people who take this shit so seriously that they feel the need to "out craft-bbq-bro" people in their snobbery fucking suck, are missing the entire point, and are fucking up the barbecue experience for the rest of us.  Lighten the fuck up, don't take it - and yourself - so fucking seriously.  And if you ever say anything about Tootsie and Snows that isn't along the lines of "it and she are a Texas treasure, and we're all fortunate to have them around to experience," you should probably re-examine your life.

First off, it's greenspoint. That's just kind of his thing.

What's really interesting is that Snow's itself played a big part in kicking off the Texas BBQ revolution. They went from virtually unknown to straight to #1 on the 2008 TM list. It was a big fucking deal at the time. I think that was one of the first things that opened peoples' eyes to the possibility that someone could go above and beyond what the traditional Lockhart, Luling, etc places had always done. This 70+ year old woman in Lexington could be the best in the state just because she was willing to outwork everyone else. A bunch of people interested in food took notice of that and off we went.

Im saying that Snows bbq has been surpassed by many, many, many joints in the state, just like Luling City Market, the lockhart big 3/4, Coopers, salt lick, etc. You would know it if u actually went to other places that have opened over the last 5 years. Heaven forbid someone judge a goddamn bbq place on its food! I dgaf about some goddamn “BBQ experience” if the food isnt worth it, which Snows isnt.

All correct.  Right with you.  We are seeing the same thing in Texas barbecue that has happened with TexMex and country cooking.  The hyper elevation of traditional foodways and then the denigration of the originals.  Same thing happens everywhere.  Look at red gravy Italian in New Jersey.  Chinese American food.  The tings that built this country as poor immigrants were presented with the abundance of America.  The stupid normalization of the term “authentic” by dumb young foodies.  
 

Snows is an institution and Tootsie a state treasure.  She learned from butcher shop days of the make something from nothing of scraps and waste.  It’s a pilgrimage to the old school places like Snows to keep one rooted in Texas traditions. I know Joe T Garcias isnt the best TexMex but I still go out of respect occassionally.  Same deal.

- line was out the door

- zero hipsters

- best sausage in the state 

- pricing is half the big name places
