I thought I posted this before but couldn't find it in the thread. The review was clearly mixed. I think the author here is probably right, it praises Carmy as an obvious genius but criticizes the staff for failing to execute consistently, including with service. His concern is that he's going to have to address that the staff he's put together isn't good enough. Because they are key characters they aren't going to be fired, but there is going to be serious drama in how to make them better and he's going to struggle with how to do that without becoming a complete asshole like Joel McHale's character.

I can see that.  Going back to folding boxes again (iirc it's been a part of 3 scenes) may be analogous to how the staff "didnt get it" wrt to the standards.

Marcus got sent to Copenhagen to learn. Maybe it’s something else like that.   Maybe Carmy decides fuck it let’s go Texas BBQ and has to get some pointers from Aaron Franklin.

Really looking forward to this season. I just hope they learned their lesson last season with cameos like Cena. It was obviously shoehorned in, he did not add anything to the story, and was a distraction from those that do.

Just finished a rewatch of S3. I've softened my dislike for it a bit.

 

Two things stood out--Computer telling Cicero he can't cover his shorts because the market ripped...meaning it's his separate own financial situation that's going to cause him to pull the plug. Also, Cicero saying that he and Donna are "cooking something up", combined with a package arriving earlier in the season that Cicero said wasn't for the restaurant, as well as the unexplained un-broken-down boxes that the Faks swear that they always break down before going into the dumpster. Seems like those are also Cicero-related.

Love this show, love the long takes and the tension.  So stressful, so good.  Also, Chris Elliott's daughter is quite attractive. 

Also, saw that the rumor that they were filming in Austin was false.  Bummer :(

I've seen S1 and S2 multiple times, but haven't rewatched S3.  I should do so before S4.

I didn't dislike S3 as much as others on the thread, but overall it lacked the cohesion of the first two, and there was no one episode that I really loved like multiple episodes in the prior seasons.  My favorite S3 episode was probably Tina's backstory.

my main gripe about s3 was about the narrative momentum.

s2 saw richie and others take positive steps to fix shit going on in their lives/their attitude. s3 all of a sudden they're back to constant yelling and screaming over each other and lack of professionalism. the lack of growth we saw in s3 almost makes me think the magic we saw in s2 was fake. and that was a significant bummer.

but yeah, cena was not it.

I’m not saying she should win, but I hope Abby Elliott is nominated for an Emmy. She’s the glue holding the show together, and she’s a terrific actress.

Not sure what happened over there at SNL. She was routinely one of the best cast members in her seasons. She’s really funny.

The reason season 3 was chaotic was all because of Carmie. He was the one factor disrupting everything and creating needless chaos with the non-negotiables, the constantly changing menu, and his general obsessiveness. He's the only character that didn't grow because he's still broken. I think season 3 showed the concept of the restaurant was good but the execution was going to suck strictly because of Carmie. But yes, less Faks and no Cena cameos.

On S1E7.  The tension/ constant arguing turns me off in the worst way.  Zero chance I would work in that environment without beating the fuck out of someone.  I have had to turn off multiple episodes because I just get put out with the constant mouth running.

I started Mad Men 3 times before I could get past what a shitbag Don Draper was, and he was still a shitbag towards his family even at that.  The business/ selling scenes carried it for me.  It became one of my favorite alltime shows.

Are the arguing/ shit talking scenes just what the show is?  I understand the appeal for some other folks.  I just don't need that.  One of my DIL's is a trained chef from the NE, so I really wanted to LIKE this show.  I can't get there.

I think you need to have worked in a restaurant to enjoy large stretches of Season 1. It feels like they were making art and they didn’t care if anybody liked it.

The oner that is that episode is how my wife described her anxiety and is the one that made her quit the show. Too real.

The appeal is that everyone I know who has worked in a kitchen says it's like that exactly. Not kind of like that but exactly

oh spot on I have not.  Never have worked in food service industry in any capacity other than a week of mess duty in the Marines.   LOL.

 

I was trying to be very respectful in how I framed the questions, but a lot of the banter/ shit talking seems unnecessary.  Then again I have worked in a dairy barn and the Marines, and there is some dialogue there that basically cannot be reproduced.

I worked the following restaurant jobs. All were somewhat miserable.

- Busboy at Willie’s Icehouse 

- Sandwich artist at Subway

- To go “waiter” at Pappasito’s

- Waiter at a small Italian restaurant

 
I’d say the Italian restaurant was the most similar to The Bear. A little Sicilian chef/owner with a lot of gambling and drug demons in his past. I have no idea how he secured a loan or if it’s was legal. He ran the place on razor thin margins before it went under. Very hectic kitchen smaller than most people’s office. It always got hot as shit back there. The stove/ovens, dishwasher, and the chef would crack the window to smoke a cigarette. All of the waitresses were bitchy and treated the busboy/dishwasher like shit. No HR to be found anywhere. 
 

We’d have a small staff meal before shift. He’s usually make the specials and let us try them. Really good guy, but he had a temper and talked a lot of shit. Great chef. Best lobster bisque I’ve ever tasted. 
 

He landed on his feet and got a plum job running the kitchen/catering at a racetrack in Texas. Full benefits and a steady salary are a Godsend for people in his field. I’m happy for him.

That's what life is like in a kitchen. I was front of the house at a few hotels, and those arguments all ring true. I've had my fair share. 

Everyone there believes in customer service and they view it their own way.

Or it makes you curl up into the fetal position and cry. I've chatted with a few people that it hits way too true and their PTSD kicked back in.

s2 is insanely good television. just watch it.

Yep. Much less yelling, and you get episodes like Forks that are slower, quieter, and develop a great character arc.

But Fishes will make you clench from beginning to end.
