We're planning to make the Family Spaghetti soon. That is a shit ton of garlic, but I'll give it a try. 

If making a dish from the show, make Mike’s Sunday bracciole. Or Mama’s chicken piccata that Sugar made. That family spaghetti sauce is a bit basic for me; it has no herbs in it. It would make a decent base to braise the bracciole in.

Finally finished this. Lots of questions, but I loved it,

I remember Chris’ Little Chicago used to have an Italian beef sandwich. Was the trailer in the field near where they later put in Red’s Porch on S Lamar. I enjoyed it, had only ever had one in Chicago previously. I need to see if there’s one somewhere in the Triangle.

That’s kind of the show. There is some plot/character development later in the season. I liked Episode 6 the best.

Went to wise guy’s in round rock tonight and got the Italian beef. It’s legit

I’ve not seen that in Chicago. That looks like dry ass shit roast. No gravy? That s what makes it a Chicago Italian beef. The meat should be wet, whether you dip the roll or not. Along with either giardinera or sweet green king peppers.

I started this show a few days ago and I'm binging and I really like it.  But I have some beef with the overall premise. Need to read the entire thread tomorrow to see if I'm out to lunch on this. That's 2x points. 

Actually I'll go ahead and post my terrible opinions and catch up tomorrow. I might be way out of touch but do we really have French Laundry type chefs taking over food stands in the Midwest and trying to pump out cakes and salads and braised short ribs and risotto? Are these joints really braising beef and whole chickens to make Italian beef and chicken Philly sandwiches? I will just say that I have been to my share of Chicago sandwich and hot dog places over the years and I'm not sure what the Spanish word for 'Chef' is but I don't think that's what they're calling each other in the back kitchen. 

A place like the one depicted in the show I'm pretty sure is serving steak ums and the majority of their traffic is coming after 10 pm CST and the patrons are too drunk to know or care about how tender the beef is. Maybe the foodie scene has really caught fire but the past two times I've been to Chicago, it's still very much Chicago and not quite Bicycle Bar type hipster dominant. I mean I know there are some hipster elements in some neighborhood for sure. But I feel like they took a lot of very different elements of the city and tried to merge them and it's not very authentic. I've never lived in Chicago so curious what the local folks have to say. 

But it's good and entertaining and that's all that matters. I am happy to ignore what I perceive to be unrealistic details if I am entertained, and I am entertained.

I think the point (aside from the character work, which is the actual point of the show) is that this is something that isn't really happening everywhere in Chicago.  It's a town that really cares about tradition and working class access.  That's what Richie represents, which is why so much of the conflict is between him and Carmy.

Haven't read the thread due to spoilers, but I watched the first 4 episodes last night and I think it's great.  I love the food/restaurant culture, so that obviously helps.  The cast is great though.  Will probably finish tonight.  Hoping there's a season 2 in the works.

I think episode 1 or something it shows him instituting the "we call each other chef" rule change. And the idea that this French Laundry/Nomo guy would be running a neighborhood beef sandwich place is explained over time. I think you're likely correct for a lot of places on the Steak-umms but also I would think that places like this do exist. I've eaten italian beef sandwiches in Chicago maybe one time though, so fuck me.

Of your criticisms, the one that most struck me (again, non food industry vet, not particularly familiar with chicago food culture) is the guy fucking around with the donuts. If I'm having problems paying suppliers for my sandwich shop and I've got the fuckin... black gale boetticher of cakes in the back measuring the ph of our water that seems like an obvious cut. Buy some cakes from the store, this isn't a cake shop. Who is buying donuts during beef sandwich hours, and if it's late night drunks I don't remember the show highlighting that aspect of their business being as important as lunch?

i like Sydney's character better than some of you, but the scene where she fucked the kitchen with the to-go orders and donut gale chooses that moment to solicit feedback on his masterpiece... what the fuck I'm on team Carmy FIRE ALL THE CHICKENS WE HAVE SHUT THE FUCK UP SYDNEY MARCUS YOU ARE DOING THIS NOW???. wtf. dude did not need to go on an apology tour and yes Sydney that was absolutely your fault

as long as i'm spoilered, i get the symbolic meaning but also stupid af to change the restaurant name at the end of the show. you're an institution, evolve with the area but keep that equity

The to-go order scene was amazing.

I felt i was fucked too.. Like i was apart of the show... " what we gonna do chefs?? we are drowning" 

that was a hoe ass move on the quitting part tho

Few things are as profitable as baked goods. I thought donuts were an odd choice based on their hours but they can be huge moneymakers. That donut probably had an all in cost of 15 cents. Sell it for 2 bucks and you’re printing money. Those ovens are going cooking rolls and beef; no reason not to keep ‘em going baking some cakes and pies; they are money if good recipes.

The Beef has been a money loser. Lots of low hanging fruit to fix the business that Carmy is putting in, but he’s resisting some others like donuts and takeout.

sydney was awful.  annoying as fuck and a dirty, unforgiving, pretentious cunt.  richie was an asshole but he wasn’t mean.  sydney had no redeeming qualities.  none.  every scene she is a stupid self-serving impatient nagging whore.  and the things she said to richie were awful and she never atoned for them.  richie forgave her immediately, though, because in spite of his glaring flaws he is pure of heart and the backbone of the show.

I think they alluded to the fact that she is near/full spectrum autistic. She's a terrible, unreliable bitch but has reasons.
