Shit I've Cooked Lately

I picked up some short ribs at HEB and thought I'd try a braised short rib version of the filipino style chicken adobo I made recently. 
Browned the short ribs in a dutch oven, then poured off the excess oil and sauteed shallots and mushrooms and added a bunch of pressed garlic cloves. Let it all sweat a minute or two and added a cup of apple cider vinegar, 2/3 cup of soy sauce, 5-6 oz brown sugar, a handful of bay leaves, and a couple of tablespoons of whole peppercorns. Put the short ribs back into the dutch oven, threw in some fresh jalapenos, brought it to a quick boil and then let it simmer for about an hour and a half. 
The I made some creamy polenta before the short ribs were done to serve with it. Very rich and decadent dish, nice and tangy from the vinegar and soy sauce. I think next time I might try to add some coconut milk to the braise as well. Really good regardless.

Looks great except it has mushrooms. You know those are a fungus. Like athlete’s foot. Toenail fungus. Mushrooms are their cousin.

Moms Famous taco’s (according to the kids). 
tasty and they are eating veggies. 
 

2 red bells peppers diced

2 green peppers diced

1 whole white onion diced 

2 cans rotel diced tomato's

3lbs of ground meat

sauté the veggies

add meat ( we use ground turkey 3lbs)  

brown meat 

add seasoning to taste

You don't owe any of us an explanation for that. Wife and I moved our OLD farmhouse to it's current location and proceeded to gut it and remodel every room in it ourselves. We had lots of rooms that looked like that for weeks into months  and longer. All that fancy shit don't make the food taste any different.

Question, since I don't want to start a thread for rice:  anybody have some good tips on a legit Mexican rice?  Everything I try turns out lame.  I mean, I know how to cook rice, but finding the right combination of ingredients is eluding me.

Real Mexican rice like in a restaurant is cooked like a pilaf. Get your mise together. It’s easy if you get your shit together.

Once you know the basic recipe you can make variations

1 cup long grain white rice
1 large onion chopped
3 cloves garlic chopped
Oil
1 14oz can diced tomatoes or rotel
2 cups chicken broth
Salt
Pepper

In a skillet with a lid, Heat some oil to coat the bottom. Add rice and stir coating all grains with oil. Sauté til starting to brown. Don’t let it become rice crispies. Add onion and sauté til clear. Add garlic and stir, then tomatoes and broth. Add salt and pepper. Bring to boil, stir, then cover and reduce heat. Simmer for about 20 minutes. Fluff with a fork and serve.

If you want a cilantro lime rice cook the basic recipe, when done add about a bunch of chopped cilantro, microplaned zest of a lime, and the juice of the lime.

Make the rice adding a chopped bell pepper, add a pound of taco meat when done, and then cheese for a simple skillet supper.

Obviously you can add whatever GM heat components you want. I like it with chopped chipotles and adobo added.

I’ll post my recipe in the next day or so.  I got sick of terrible Mexican rice even in restaurants.  Mine fucks.

Wife's (no pics) birthday today so A5 Japanese Wagyu Ribeye and Live Main Lobster.  Possibly one of the best meals of my life and an idiot could cook it with just the slightest bit of research (I actually took after pics of the steak this time so I wouldn't be accused of burning it).

Thank you as well.  I am decent at a couple things.  Knowing this difference between .jpg, .gif, .heic is not one of them.  But, good to know.

Maybe this should go in the soups and stews and cold weather foods thread but it seems to be related to this. My pics probably don’t do it justice. It’s one of those dishes that’s better the next day. But this rocks. The base is beer and garlic and horseradish and Worcestershire. The scent while it’s cooking is intoxicating. 
I’ve made it a lot and I don’t really follow the recipe all that closely but it started with this:

I tried quartering the onions but that leaves some really large onion slices and I don’t like that. I added celery because, well, duh. I’ve made it with beef chuck roast cut into cubes and dusted in flour and browned, that’s good too and helps to thicken the gravy. Instead of quartering the onions I’ve decided to dice them fine and let them dissolve into the gravy. I thought about adding some flour to the onions and garlic but the starch from the potatoes does a good enough job of thickening the gravy.

I get this great “garlic smoked kielbasa” from Fligners up near Cleveland. The beef stew approach is fine but somehow this seems to fit better.

I’m not sure if “garlic smoked kielbasa” distinguishes it from any other kielbasa, but this stuff is great and I’m not about to buy anything from Johnsonville.

I brown the sliced kielbasa in bacon grease, remove it, throw in the onions and garlic and sauté that for a little bit, add the horseradish and Worcestershire, bay leaves and freshly ground black pepper, this time I threw in some whole green peppercorns. I return the kielbasa, add the potatoes, and then I wait to add the carrots and celery until halfway through the cooking process so they don’t get mushy. I want to be able to slice the carrots with a fork without them getting smashed and I want the celery to retain a little crunch. The part of that recipe that recommends removing the lid and turning up the heat is too much, imo. 15 minutes is sufficient. And I used about a beer-and-a-half. And more garlic. Always more garlic than the recipe calls for.
