I'm making some white people green enchiladas with chicken breast and cheese and low carb tortillas tonight. It will come out like that I think.

From which end?

Was looking for salt pork and came across this.

Burgers’ Smokehouse has been making damn good aged country ham for 100 years. My old man still sends me their bacon and jowl sampler for Christmas. This stuff made some great Sichuan dry fried green beans.

Picked up some Hatch Chorizo I'll be trying for the first time.

I give it a thumbs up although I don't find the Hatch flavor to particularly pop. Perhaps it contributes to the overall flavor profile though. It makes a good taco and I'd buy it again.

I usually roll my own pasta sauce, but in a time crunch I'll grab a jar of Rao's.  This Central Market brand was on sale a couple of weeks ago so I took a chance.  Honestly, it's as good as Rao's at half the price, and has a similarly basic ingredient list.  I threw in a pound of HEB's Italian sausage from the meat counter and had poor man's bolognese in less than an hour.

Picked up Gingerbread dough, can report caramel apple is legit, pumpkin pie is legit, the oatmeal one needs more oatmeal cookie, still good.

They have eggnog and another called candy cane.

I dont see it slowing down

Careful. That guy got knocked the fuck out for mocking the cranberry juice order, and Herbie even lifts, bro.

My understanding is there are guys you can hit and guys you can't hit, and he ain't exactly a guy you can't hit.

I tried the Mi Tienda you-bake blue corn tortillas again.  They still suck.  They're super fragile and have a weird texture when cooked.  Any (Austin) options for blue (or red) corn tortillas?  Not tostadas.  I have a couple of mercados to check nearby, but I'm not sure they'd stock such a thing.

How are they different than the regular “you bake” corn tortillas? Because those seem to turn out fine?
Or…just get fresh corn tortillas from most any Mercado?

I haven't tried the yellow corn version.

I want red or blue for a very odd reason:  my wife has to eat an extremely restricted carb diet, so when I make "enchiladas" I use the very low carb flour tortillas for her.  I understand, it's not authentic at all.  The problem is that if I use yellow corn for me once everything is all sauced up it's hard to see which is which.  Blue or red corn tortillas are pretty obvious.  There are other solutions, sure -- two different pans, etc.  I'm just trying to simplify.

Thank you for coming to my Ted talk.

Two different pans seems a lot easier than driving around town looking for red tortillas.

Well, New Mexico stacked blue corn enchiladas is also a delicious option.  Don't forget the fried egg.

This is starting to sound like the insistence that I change my San Francisco vacation to San Diego.  Is it really that absurd to ask where I can find blue corn tortillas in Austin?  surly gonna surly
