Had some of this at a friend’s Christmas party last weekend and took a pic so I’d remember to order some.  It was really good, hot but not too hot to ruin the flavor.

I make my own table sauce now and I use it on almost everything. HEB occasionally has red jalapenos in stock. I'll by about 25 of them, clean them, halve them and throw them in a 2 quart jar with 2-6

Thanks for the lesson on how peppers work. You know I'd lived 43 years on this earth and never really had any concept of how heat and spice in food functions until you came here to enlighten me about

Would this make a good gift set?

Of course.

Saw this at my corner gas station today of all places. Anyone had it?

Yes. It’s good to me, very mild. I celebrate their entire catalog, especially the Clasica on seafood cocktail, but that’s even milder

I was in walmart and they've got a solid selection of "samplers" for a buck each.

Nice way to try new stuff

My daughter has "hot sauce" on her Christmas list.  Any recs on a good gift pack from a particular vendor?  Maybe 3 types?  Nothing too hot, more like table sauce heat (Crystal, Cholula, etc.).  I'm thinking red, green (Dona-ish?) and something a little more exotic (mango-habanero or some such).  Hopefully available either local retail or amazon.  Thoughts?

too late for now - mikey v's is from georgetown and has a retail shop on the south side of the courthouse square.

Herdez makes what they call a street sauce in a few flavors. I have the Roja and avocado cilantro. Going to get the rest. They slam. Not really hot sauce per se but also not salsa. Reminds me of the thin sauces you get at a taco truck. Great on eggs, tacos, your mom.... whatever.

NSIAP, this shit tastes great. Tiny bit of a kick so I wouldn't really call it hot sauce but the flavor is great. Tomatillo, cilantro,  hab, japs. Good shit.

Add these together and you have a sauce that can be used for anything.

A few years back I got tired of the pepper flakes that I used on my pizza having no heat. I was blindly grabbing pepper flakes and later realized that the red pepper flakes from the spice rack are not the same as chili flakes. While going down the rabbit hole, I discovered this company and ordered a few containers. If you like the heat and flavor of Habanero, I recommend it. The Serrano is really good too, but not near as hot. They have dozens of products that you guys might be interested in if you like to spice things up. Lately I've been baking tilapia with a little olive oil, apple smoked sea salt, garlic powder, and the habanero flakes. Me thinks it's pretty tasty.

For the last couple of years I've been using this from TJ's.

How are "red pepper flakes" not "chile flakes"?  I mean, they may not (typically) blow your head off, but they're definitely sourced from chiles and have at least some heat.

According to what I read, crushed red pepper flakes tend to be a mixture of different peppers. This includes peppers with no heat used as a filler, like bell peppers. Chile flakes are just that, chili pepper flakes. It's like everything else, it's gotten to where you can't trust the labels.

"Red pepper flakes are made from a mix of peppers from the capsicum annum family. Don’t get confused by the latin. You know these guys. We’re talking peppers like jalapeño, bell, Fresno, and Anaheim peppers. But the most commonly used pepper for crushed red pepper flakes is the cayenne pepper. The majority of red pepper flakes will be a mix of peppers, with cayenne taking up the majority of the share. The makeup will change, depending on which brand or company you end up purchasing."

Chili flake talk is reminding me that I’ve meant to take Bayless’ advice here -

Thanks for posting that.  I bought some of their Trinidad moruga scorpion flakes.  It's legitimately very hot, which is what I was looking for.

My teenage son goes through hot sauces, mostly Mexican styles like the hottest Valentina’s, as if they are going out of style. So we got him some hotter sauces for Christmas and we’ve been using them. Some were so absurdly hot that we just threw them away after trying them because they were ridiculous.

The big winner, which I am sure is mentioned somewhere here, has been the Yellowbird ghost pepper sauce. It’s outstanding and we use it both on its own and blending it in with other stuff. Add a squeeze to Whataburger spicy ketchup and it changes the experience, for instance. Lazy and easy and delicious with fries or their hash browns.

We got 3 of the Yellowbird sauces for our younger daughter for Christmas, as she asked for hot sauce.  I was sure she'd be surprised and unaware.  "Oh, Yellowbird, I love this stuff.  We serve it at Kerbey Lane Cafe."

Furk.

This flatiron stuff is awesome. It goes great on stuff that isn’t great for wet heat sources.

Flatiron is great, taste so fresh and 1000x better than regular store bought.

I never noticed that Dark & Smoky BBQ Rub before. Just ordered it. It looks like it could be the perfect rub for fajitas.

In news that is relevant to no one but me, I can say that after samplaing all of the Valentina's brands, Cholula, and Tapatio that by far I think Tapatio is the best. I think all I have left to try is El Yucateco. Tapatio was far and away the winner through.

Certain El Yucateco sauces will light your asshole on fire. Great on bacon egg cheese sandwiches.

Melinda’s garlic habanero has recently entered my rotation and I love it. Reminds me of torchys diablo.

While not as hot as some of the hottest, I just really like the flavor of the yellow scotch bonnet hot sauces.

The little bottle is one of several I re-ordered from some small vendor on Pike Street market in Seattle.   I go through them like crazy, but for some reason, they don’t have a larger bottle, so I buy several of the small ones at a time.

IMG_3057.thumb.jpeg.b065967d6c2d94f8f1ce69d1814390d2.jpeg

I splash them on all burgers and chicken sandwiches - and on most egg dishes I have for breakfast.

Big fan also, this one is my favorite that I have found.  This one is a bit spicer than most scotch bonnet sauces but I love the flavor.  Also it’s bigger bottles mostly.

Amazon has free delivery on a six dollar small bottle of the highly ranked sauce you recommended.

Thanks for the heads up I’ll give it a go

This stuff is great but you need a surgeon’s hands when the bottle is half full. It’s thick so you start with some momentum and have to dial it back pretty quick.  Or else you end up with a big blob right in the middle of your plate.

One of the better flavored habanero offerings that you can find easily.

I don't know when it took over for hot sauces, but the squeeze bottle is the superior delivery system.  I get frustrated with the hot sauces that won't convert.

I need these two to come in bigger bottles. No luck finding them anywhere besides Fiesta.

I made a version of that Marie Sharp last week.

I smoked 20 habaneros for an hour. Blended them with vinegar, salt, and boiled carrot, onion, and garlic. I was aiming for Smokin’ Marie but it turned out closer to the OG habanero sauce.

Our grocery store just started carrying Yellow Bird.  Grabbed some of the Serrano.  Pure crack.  Will have to get the rest.

I've had yellow bird recommended twice this week before your post.  Guess it's time to take the plunge and get a bottle. Had close to 40 different sauces in my collection a couple years ago.  Trying to bleed out the ones I don't love or minimize sauces with the same flavor profile.  I'd like to end up at 10-12 that are just my favorite go-to sauces with a wide variety of heat and uses.

Yellowbird Habanero is my #1 for eggs and pizza.

Need to get a bottle of the Serrano.

There were 4 variants at our local grocery store.  They had the siracha, serrano, habanero, and jalapeno.

I'm currently working on chile habanero bottles from El Yucateco and Mexico Lindo, and I prefer the El Yucateco.

The Serrano is good, but the Trader Joe's green dragon is even better, imo, if there is a TJ's in Iowa.

Habanero and Ghost Pepper are the two best Yellowbird, IMO.

Yeah, we have Trader Joe’s an hour away.  I’ve seen that stuff, will have to try it.

I don't like the serrano because the cucumber taste is too heavy, and I like cucumbers.  Just gives stuff a weird vibe.  I love the habanero though.

See, I don’t like raw cucumber much, and I like it a ton.  I’ve had other hot sauces with cucumber in and liked that too.

I'm with you there, and I absolutely love raw cucumbers, even more with a little salt.  I tried to make a DIY V8 when I got my VitaMix and overdid it on the cucumbers -- it was undrinkable.

My new favorites. Not sure if you can order it but it's available at the Memorial Villages Farmers Market in Houston. I need to try the rest.

Absolutely great flavor, up front heat but not enough to drown out the flavor. If you want super hot, these aren't for you, but if you prefer flavor, then these are killer.

Apparently he was a James Beard semifinalist.

Found this gem in the $1 sample bin at Walmart. The habanero flavor is more dialed back than most habanero sauces, so it's more versatile. Kind of a mix between a Yucateco-type sauce and Crystal's.
