Nobody roasts a chicken as well as Jonathan Waxman, save maybe Thomas Keller, and Waxman uses EVOO and roasts at 450 F.  Good enough for me.  I can't taste any off flavors and I don't care if I've lost some antioxidants.

as already stated it probably doesn't get up to 450 in the oven. but science is science.

It may not get that hot, but the chicken is basted with the drippings and oil, and it's immersed in a 450 deg environment for over half an hour.  The mechanical engineer in me is highly skeptical that the surface oil doesn't exceed EVOO's smoke point.  (Full disclosure:  I hated thermodynamics and only tolerated heat transfer because the underlying math was interesting.)

only a minority (some recs say as low as 5%) of fat calories should come from polyunsaturated fats (PUFA) and of those you want to keep the ratio of Omega 6 : Omega 3 at around 2:1. So if you are cooking with oil you want to use one that is low in total PUFA or if high in total PUFA you want the ratio of 6:3 at 2 or less.
 

The worst for you are ones that have high total PUFA and high ratio of 6:3. Some of the worst are safflower oil, cottonseed oil, corn oil, and soybean oil. And guess which oils snack food / processed food manufacturers, chain restaurants, and other industrial kitchens use most commonly?

Smoke point for EVOO starts around 375, starts around 500 for avocado oil. One thing absolutely happens when you exceed the smoke point - the oil breaks down and the first things to go are the antioxidants which is one of the primary reasons you consume EVOO. Flavor goes after that. Longer cook times the oil can even break down enough to transform to harmful compounds.
added bonus - do it with a ceramic non-stick and it will ruin the non-stick.
as sawbonz indicated it’s probably ok in the oven, one a good oven you can dial in the max temp at 350 which is plenty for most oven cooked vegetables, and two it probably doesn’t get that hot anyway. 
the stove top is dicey when it comes to EVOO.


You’re assuming that people are primarily searing things at high heat on the stove top. If you are searing meat, then I would agree that avocado oil or ghee are much better options than EVOO due to the higher smoke point.

Most of my stove top cooking is at lower temps for sautéing garlic and onion, vegetables, or cooking other meats at lower temps. I don’t want to scorch meats like chicken or shrimp. EVOO is my default for all of those things.

So how does everyone feel about Testosterone Replacement Therapy and drinking raw milk? Might as well throw in some dog meat into the conversation as well.

350 degrees is about 4-5 on a 1-10 stove top dial.

i don’t know why yall are arguing these are just facts. It’s like I’m criticizing your favorite personal lubricant or something.

Olive oil is great for you so is avocado oil. olive oil a tad better but probably negligible. Smoke point matters for how great the oil is for you when consumed (so is mfg techniques). Olive oil is more delicate when used in cooking and avocado oil is more versatile because of their relative smoke points. Olive oil taste better or more accurately has a more distinctive taste and is great for cooking as long as you pay attention to the smoke points.
 

These are facts.  They aren’t disputable. 

cook with olive oil at low heat and medium heat no problem. Up the dial and it degrades. Again just facts.

We banned gender affirming care. If I can’t have my estrogen you can get fucked on TRT.

You do realize that is not how this works, right?  Penis pills = (probably) covered by insurance.  Birth control = stop being a skank.
