Hey Steel Shank!

While it may not be (today) in the true spirit of the thread, I beg forgiveness of the masses, because @BabaYaga originally posted the recipe here. There was a marked down Waygu chuck roast at HEB this morning. So I bought it and all the fixings…. And yes, HEB got their first fresh batch of hatch in. Wish they were spicier, but the mushrooms, carrots, and onions absorbed just a tinge of spice and were perfect. Cant wait for the sandwiches tomorrow. I’ll probably skip the Waygu next time, because although the flavor was fantastic, it wasn’t as tender as I like my pot roast. $9 Waygu chuck roast, so hopefully @Steel Shank can at least approve that.

For you Mississippi Pot Roast guys - make a gravy from the drippings. It is a complete game changer.

First, you have to procure a fat separator.

Drain off the the good, seasoned drippings into a skillet, add a slurry of flour and water or corn starch and water, bring to a boil, turn down to simmer, heat D0B5A4A1-5DC9-4BFE-BFA3-69FF29409138.thumb.jpeg.290001777c728bc5351ab9698a7e7241.jpeguntil it is the consistency you like as a a gravy.

I usually make mashed potatoes with lots of butter and cream, but rice will suffice in a pinch, as I did the last time I made this because of time constraints. Slams and goes hard.

It's the sandwiches that will determine your fate on this thread.

how’s the pizza? legit or does it taste like gas station pizza.

If it's straight outta the oven and hot...really damn good.  If it's been sitting under the lamps a while...still good.

Like most great foods in life, it improved significantly in the fridge. Also better on some slider buns than eaten as a pot roast. raided the work fridge for japs and pepprocinis because the hatch didn't have enough spice after two days. I had 4 then ate the carrots.
