Also I regret to inform you that actually all of the texmex in Austin is inedible. You must have missed the memo here. You're better off eating Korean-Thai-LGBTQ-BBQ-fusion out of a trailer behind a bar that requires a password to enter for $30 a person. 

I've been out in Bastrop for a bit now and have grown fond of an establishment called Guadalajara. Mainly for the margs but the food doesn't suck. I'll do the 3 cheese enchiladas and post a pic here next time I'm there. Highly recommend if y'all are ever in the area.

Looks like maybe the same branding as the Guadalajara in The Woodlands. No idea if that place still exists, it’s been 25 years at least, but they had great tortillas.

May be for the heb thread but I anticipated with the store in Mansfield they’d have really good cheese enchiladas in the ready to go section or at least In frozen foods.  Nada.  Am I looking g in the wrong place?

There some tiny tray of cheese enchiladas with rice and beans in the meal simple section. Every once in a while I take a look but at $9 or $10 that's a hard sell.

Per the app there's a 4 pack tray, supply your own rice and beans.  But by then it's creeping up to restaurant pricing, having already left taco cobano behind.

When the gravy is on point, still hard to be Maudie’s perfecto. The bartender that keeps asking me if I want beef, chicken or cheese when I order perfecto makes me shake my head though. Good guy otherwise.

Maudie's is like Schroedinger's texmex restaurant in that I feel like it is always somehow both over and underrated. Part of it is probably some consistency issues - especially across locations. 

Even on a personal level I have had pretty bad meals there and I have had amazing meals there and thought at various points that their food was either pretty crappy or actually pretty damn good.

These days I almost always go to the Lake Austin one but I’ve had many, many Tio Chon Enchilada plates there and at 360 over the years and it’s always really damn good. Only a few more weeks and I’ll be back for a football game and definitely a meal at Maudie’s.

Their rice sucks even on a good day. Beans have always been fine.

No difference in the price. At least I am not paying attention to that. Just want a plate of cheese enchiladas and a Gils, and I don't particularly care for the rice and beans.

I have been on this spinning rock now for almost 5 decades and sadly today is the first time it hit me that I should be asking for extra sauce on my enchiladas. This post was a fucking epiphany.

Yeah, that never occurred to me.  Next time.  What is it, $2 or so?

I'm a dumbass.

I will say their tortillas don't last the day very well, so I don't know about that.  Get the HEB heat and eat.
